Maharashtrian Amti (Dal Recipe)

Ingredients
Dal cooked – 1 cup
Red chilli powder – 1 tsp
Cumin powder – ½  tsp
Jaggery – 1small piece
Freshly grated coconut/ paste of dry coconut – 2 tbl.sp
Tamarind pulp – 2 tsp
Few curry leaves
Coriander leaves for garnishing
Salt as per taste

For tampering
Asofoetida – ¼ tsp
Mustard seeds – 1 tsp
Whole red chilli – 2

Method
Heat oil in a pan, add mustard seeds, when it start to splutter, add asofoetida and whole red chillies and fry for a minute, add cooked dal to it. Stir and add red chilli powder, roasted cumin powder, jiggery, coconut, curry leaves and tamarind pulp.
Stir well and leave it to boil.
Remove and garnish with coriander leaves and serve hot.

Sindhi Kadhi

Ingredients
Tuvar dal – 1 cup
Tomato puree – 2
Tamarind pulp – 2 tbl.sp
Mustard seed – 1 tsp
Cumin seed – ½ tsp
Fenugreek seed – ¼ tsp
Few curry leaves
Turmeric powder – ½ tsp
Asafoetida – ¼ tsp
Mixed vegetable – beans, okra, potato, carrot
Green chillies – 2 slit open
Besan/ chickpeas flour – 3 tbl.sp

Method
Soak dal in water for half an hour and then pressure cook it till soft and tender.
Wash and cut vegetables.
Heat oil in a pan, add mustard seed, then cumin seed, fenugreek seed, curry leaves, asofoetida, green chilllies then add besan and stir fry for 2 minutes till light brown in color.
Add the cook dal, tomato puree and tamarind pulp and chopped vegetables and cook till the vegetables are done.
If the dal is too thick, add little water to it.

When done, serve hot with rice.

Spicy Dal Recipe

Ingredients

Mixed dal – 1 cup

(chana dal, moong dal and urad dal)

(gram dal, green gram dal, black gram dal)

Chopped onion – 1

Garlic – 2 tsp

Chopped Green chillies – 2

Turmeric powder – ½ tsp

Red chilli powder – ½ tsp

Oil

Salt

Water

For tampering

Ghee or butter – ½ tbl.sp

Asafetida – a pinch

Cumin seed – ½ tsp

Cloves – 2

Cinnamon – ½ inch

Black pepper – 2

Whole red chillies – 3

Method

Soak dal for one to two hours and then pressure cook it till it becomes tender.

Heat oil in a pan, and add chopped onions, garlic and green chillies and fry for two minutes. Then add cooked dal, turmeric powder, red chilly powder, salt and water. Bring to boil.

In another pan, heat ghee or butter, and add all the ingredients given for tempering.

Add this cooked dal and boil for two minutes and serve hot with rice.

Dal Makhani


Ingredients
Whole black gram or urad dal – ½ cup
Rajma or red kidney bean – 2 tbl.sp
Red chilli pd. – 1 tsp
Chopped ginger- 2 inch
Chopped garlic – 6
Chopped onion – 1
Chop tomatoes – 2
Green chilli - 2
Butter – 3 tbl.sp
Cumin seed – 1 tsp
 Oil – 1 tbl.sp
Salt as per taste

Method
Wash and soak whole urad dal and rajma overnight in water. Next day pressure cook it with salt, three cups water and half of the red chilli powder. Cook till it is very soft. Heat oil or butter in a pan, add cumin seeds , when they splutter, add chopped ginger garlic and onion and sauté till golden brown. Then add chopped tomatoes, slit the green chilli and add to it, add the remaining chilli powder and cook till the tomatoes are reduced to a pulp. Add the dal and rajma along with water, then add garam masala and salt. Cook for few minutes and serve hot.
