Dal Dudhi




Ingredients
Onion – 2 medium chopped
Ginger garlic paste – 1 tsp
Tomato – 2 chopped
Green chillies – 2 slit open
Cinnamon – 1 small piece
Caraway seed /shahijeera – 1 tsp
Cloves – 2 to 3
Red chilli powder – as per taste
Turmeric powder – ½ tsp
Coriander powder – 1 tsp
Roasted cumin powder – 1 tsp
Garam masala – ½ tsp
Tuvar dal – 4 tbl.sp
Chana dal – 2 tbl.sp
Moong dal – 2 tbl.sp
Bottle gourd – 250 gm
Salt as per taste
Mint and coriander leaves for garnishing

Method
Peel and chop bottle gourd into pieces.
Wash and pressure cook all the dal given along with turmeric powder and chopped bottle gourd.
Heat oil in a pan, add cinnamon, cloves, caraway seed and cook till it splutter. Add green chilli and fry for few seconds.
Add ginger garlic paste  and sauté for few seconds.
Add onion and cook till it is light brown in color. Add  chopped tomatoes and cook till it is totally mashed. Now add all the powder masala and  fry on a low flame till oil separates.
Add the cooked dal and mix it well. Let it simmer on a low flame till it starts boiling.

Garnish with mint and corriandr leaves and serve hot with rice or roti.

Dudhi Rabdi (bottle gourd rabdi)




Ingredients
bottle gourd - 1/2 kg
milk - 1/2 cup
condensed milk - 3/4 cup
cardamom powder/rose essence
chopped almonds and pistachio and raisins


Method
Heat ghee in a pan and add chopped almonds, pistachio and raisins and fry for few seconds. Remove and keep aside and in the same pan add grated dudhi/bottle gourd, condensed milk, milk and cook till it becomes thick. Add cardamom powder. When done remove in a bowl and garnish with fried nuts.

Launki Muthiya


Ingredients
Grated bottle gourd/launki – 250 gm
Wheat flour – 1 cup
Chickpeas flour/besan flour – ¾ cup
Semolina – ¼ cup
Ginger garlic paste – 2  tsp
Green chili – 2
Baking soda – ½ tsp
Curd –  ¼  cup
Sugar – 2 tsp
Red chilli powder – as per taste
Salt as per taste
Coarsely grinded peanuts – 3 tbl.sp
Lemon juice – 1 tsp
Coriander leaves

For tampering
Oil – 2 tbl.sp
Mustard seed – 1 tsp
Sesame seed – 1 tbl.sp
Few curry leaves

Method
Combine all the ingredients given except lemon juice and coriander leaves and knead to a soft dough.
Make oblong shape balls and steam it for 20 -25 minutes.
Heat oil in a pan, add mustard seed and sesame seed, when they start to crackle add curry leaves and muthiya, mix well and cook for 5 to 6 minutes.
Remove in a bowl and garnish with coriander leaves and add lime juice to it.

Dudhi Phirni (bottle gourd recipe)


Ingredients

Bottle gourd – 250 gm
Milk – 1 litre
Condensed milk – ½ can
Milk powder – 2 tbl.sp
rice - 2 tbl.sp
Dry fruits – 2 tbl.sp
Cardamom powder – ½ tsp
Ghee/butter – 2 tbl.sp
Saffron soaked in milk

Method
Peel the skin and grate bottle gourd(dudhi)
soak rice in water for one hour and then grind it coarsely.
Heat ghee in a pan, and fry this grated bottle gourd for 2 to 3 minutes and remove and keep aside.

In the same pan, add milk and leave it to boil. When it starts boiling,add rice and cook till the rice has become soft and tender.
 Add condensed milk, then add grated bottle gourd, cardamom powder, milk powder and cook for 2 to 3 minutes.

Remove from fire and garnish with  dry fruits and saffron and serve.
