Ragda Pattice | Chaat Recipe | Mumbai Street Food Recipe





Ingredients
For the pattice
Potatoes – 4 boiled
and mashed
Cornflour – 1 tbl.sp
Red chilli powder –
1 tsp
Cumin powder – 1 tsp
Turmeric powder – ¼
tsp
Salt as per taste
For making ragda
White peas – ½ kg
Turmeric powder – ¼
tsp
Chilli powder – 1 tsp
Garlic flakes – 3 to
4
Ginger – 1 small
piece
Garam masala – ½ tsp
Salt as per taste
For garnishing
Tomatoes – 2 chopped
Onion – 2 chopped
Green chutney
Few chopped coriander
leaves
Dates and tamarind
chutney
Nylon sev
Chaat masala

Method
White peas soaked
in water for 5 to 6 hours and then pressure cook it by adding salt and turmeric
powder till it becomes soft.
Crush ginger and
garlic and keep aside.
Boil and grate
potatoes and then to it add corn flour, red chilli powder, cumin powder,
turmeric powder and salt and mix it well. Make flat  round balls and shallow fry in oil till
golden brown in color.
In another pan,
heat oil and add ginger garlic and sauté for few seconds, then add cooked peas
and red chilli powder, garam masala and salt. Mix well and let it cook till it
becomes little thick.
In  a serving plate, first keep pattice 2 to 3
then put ragda on it and then  garnish it
with green chutney and  dates tamarind
chutney and then sprinkle it with chopped onions, tomato, coriander leaves and
nylon sev and chaat masala. Serve hot.

Chicken Quesadilla



Ingredients
Boneless chicken - 200 gm
Garlic cloves crush - 8 to 10
Red chilli powder - 1 tsp
Roasted cumin powder - 1 tsp\
Crushed whole pepper - 2 to 3 tsp
Juice of half lemon
Salt as per taste
Grated processed cheese and cheddar cheese
Finely chopped red yellow and green pepper and spring onion
Tortilla or chapati

Method
Take boneless chicken and marinate it with red chilli powder, cumin powder, pepper powder, juice of half lemon and salt as per taste. Leave it aside for half  to one hour.

Heat a pan, add little oil to it and add crushed garlic cloves. Saute for few seconds and then  add this marinated chicken pieces. Cook till they are done. Add chopped vegetables and cook for 2 minutes and off the flame.

Take tortilla or chapati and spread one spoon of this mixture on one side and sprinkle cheese on it.
Fold it. Heat a pan and shallow fry it on both the sides till cheese melts. Serve hot.

Pizza Dough Balls



Ingredients
pizza dough balls
pizza sauce
mix vegetable like corn, capsicu, carrot, olives etc
cheese

Method
With the  help of a rolling pin, roll pizza dough into small round balls., spred pizza sauce on it.And then spread vegetables. Then sprinkle little cheese on top and cover and  make small balls.
Brush with little oil on top.
Bake it in an oven at 180 degree celcius for 15 to 20 minutes. Serve hot.

Pan Pizza Without Yeast


For making dough
Maida flour/refined flour – 2 cup
Baking powder – ½ tsp
Baking soda – ¼ tsp
Salt – ¼ tsp
Oil

For the pizza sauce
Garlic – 5 to 6
Onion – 2
Olive oil – 2 tbl.sp
Tomato – 4 to 5
Pepper corns – 8 to 10
Green chilli – 2
Dried oregano or mixed Italian herbs– 2 tsp
Salt

For the topping

Sliced onions
Capsicum chopped
Olives
Mozzarella cheese
Dried oregano

Method

To make pizza bread
In a bowl, sieve together flour, baking powder and baking soda. add salt and water to knead into smooth dough. Apply oil over the dough and leave it to rest for an hour or more.
For making pizza sauce
Heat olive oil in a pan, add chopped garlic and sauté for a  minute, then add pepper corns and green chili and again sauté for 2 to 3 minutes. Add sliced onion and sauté till it becomes soft, then add tomatoes and stir fry till it is totally mashed. In the end add salt and oregano or mixed herbs. Remove from fire. When it cools down, blend it to a fine paste and your pizza sauce is ready.

To make pizza
Knead the dough again, and then with the help of a rolling pin, flatten it. Heat pan and cook on one side on a medium flame.
 Lower the flame, put one more pan under the pan ( so that the base doesn’t get burn) and then turn the flatten dough to the other side
Spread pizza sauce on it, then sprinkle onion, capsicum, olives, mozzarella cheese and dried oregano.
Cover it and cook on a low flame till the cheese melts. Cut it into desired pieces and serve hot.
