Chicken Quesadilla



Ingredients
Boneless chicken - 200 gm
Garlic cloves crush - 8 to 10
Red chilli powder - 1 tsp
Roasted cumin powder - 1 tsp\
Crushed whole pepper - 2 to 3 tsp
Juice of half lemon
Salt as per taste
Grated processed cheese and cheddar cheese
Finely chopped red yellow and green pepper and spring onion
Tortilla or chapati

Method
Take boneless chicken and marinate it with red chilli powder, cumin powder, pepper powder, juice of half lemon and salt as per taste. Leave it aside for half  to one hour.

Heat a pan, add little oil to it and add crushed garlic cloves. Saute for few seconds and then  add this marinated chicken pieces. Cook till they are done. Add chopped vegetables and cook for 2 minutes and off the flame.

Take tortilla or chapati and spread one spoon of this mixture on one side and sprinkle cheese on it.
Fold it. Heat a pan and shallow fry it on both the sides till cheese melts. Serve hot.

Vegetable Quesadilla - Easy Mexican Recipe



Ingredients

For the dough
A cup of wheat flour and maida/all purpose flour. Knead it to a dough and keep aside.

Chopped vegetables like red, yellow and green capsicum, mushroom, baby corn
spring onion take in small quantities
Crushed garlic cloves - 10 to 12
Roasted cumin powder - 1 tsp
Chilli flakes - 1 tsp
Crushed black pepper - 1 tbl.sp
Few chopped corriander leaves
Juice of half lemon
Grated mozerella and cheddar cheese
Chopped tomato - 1 big
Salt as per taste

Method
Heat olive oil in a pan, add garlic cloves crushed and saute for few seconds.
Add all thechopped vegetables and cook for a minute. Add crushed pepper powder, chilli flakes, cumin powder, few chopped corriander leaves, juice of half lemon. Cook for two minutes and off the flame.  Add chopped tomato and mix it.
Roll chapati and cook on a pan, it should be half cooked.
Remove it in a plate, add vegetable stuffing and grated cheese. Cover the roti and again heat on a pan till cheese melts. Serve hot.

Vegetable Quesadilla




Ingredients
onion - 1
chopped garlic flakes - 4 to 5
tomato - 2
sliced cabbage and capsicum
boiled and mashed corn - 1 cup
boiled and mashed kidney beans/rajma - 1 cup
mixed herbs - 1 tsp
grated cheese
salt and pepper as per taste
chapati/roti

Method
Heat oil in a pan and add chopped garlic and saute for few seconds without changing its color. Then add onion, tomato, corn, kidney bean, mixed herb(optional), cabbage and capsicum and salt and pepper and cook for 2 to 3 minutes. The vegetables should not be overcooked, it should be crunchy.
Take chapati, spread this mixture on it and you can even add sour cream or salsa to enhance the taste and then roll it. Cut into half and serve.

Mango Salsa

Ingredients
Mango – 1 big
Onion – 1 small
Green chilli – 1
Lemon juice – 2 tsp
Salt and pepper as per taste
Coriander and mint leaves

Method
Combine all the ingredients together in a bowl and leave
this to set in the refrigerator for half an hour till all the flavours are very
well incorporated with each other.
Serve with nacho chips.a

Tomato Salsa Recipe

Ingredients
Ripe red tomatoes – ½ kg
Capsicum – 1
Onion – 1
Extra virgin olive oil – 2 tbl.sp
Lemon juice – 2 tbl.sp
Salt and pepper as per taste
Coriander leaves – ¼ cup

Nacho Chips Recipe



Maize flour/Corn flour – 1 cup
Wheat flour/all purpose flour – ½ cup
Salt – a pinch of
Oil for frying
