Potato Spinach Sabji


Ingredients
Spinach – 2 bunch
Potato – 1 big
Onion – 1 big
Tomato – 1 big
Salt and red chilli powder as per taste
½ tsp of ginger garlic paste
Besan flour
Hing – ¼ tsp
Mustard seed – ½ tsp
Turmeric powder – ½ tsp

Method
Boil potato, chop onion and tomato into small pieces. Chop spinach and boil in water for 5 minutes.
Heat 2 tsp of oil in a pan, and add hing(asafetida), mustard seed and turmeric powder. When mustard seeds start to splutter, add chopped onions. Sauté it till it becomes translucent and then add tomatoes. Cook for a minute till the tomatoes are little mashed up and then add ginger garlic paste and sauté till raw smell goes, then add chopped potato and boiled spinach. Mash the spinach well. Add two teaspoon of besan flour to it and mix it well. Add red chilli powder and salt and mix well, then add one teaspoon of garam masala and remove from fire. Serve this hot with roti, pulka or bhakri.
