Baby Corn Manchurian

Ingredients
Green chilli – 2
Finely chopped ginger garlic – 1 tbl.sp
Capsicum – 1
Baby corn – 10 to 15
Onion – 1
Soya sauce – 1 tbl.sp
Green chilli sauce – 1 tbl.sp
Vinegar – 1 tbl.sp
Tomato sauce – ¼ cup
Salt as per taste
Cornflour paste – 1 tsp dissolved in water

To shallow fry or deep fry baby corn
All purpose flour – 3 tbl.sp
Corn flour – 1 tbl.sp
Salt and pepper as per taste
Method
Cut baby corns into four pieces and dip in the paste and shallow fry or deep fry in oil.

In a heavy bottom pan, add one tbl.sp of oil and to it add chopped green chilli, onion and chopped ginger and garlic. Sauté it till the onions become little transparent.

Then add fried baby corns and stir fry for 2 minutes.

Add soya sauce, chilli sauce, vinegar, tomato sauce and salt and again stir fry for 2 minutes.

Then add chopped capsicum  and cook for 2 to 3 minutes to keep the capsicum crunchy.

When done, serve hot with fried rice.

Soya Chunks Manchurian

Ingredients
For marination
Soya chunks – 1 cup
Green chilli paste – ½ tsp
Ginger garlic paste – ½  tsp
Salt and sugar as per taste
Soya sauce – 1 tsp

For the gravy
Garlic flakes – 4 chopped
Ginger chopped – 1 inch
Green chilli paste – 1 tsp
Onion – 1
Capsicum – 1
Vinegar – 1  tbl.sp
Tomato ketchup – 2 to 3 tbl.sp
Soya sauce – 1 tsp
Corn flour – 2 tsp dissolved in cold water
Salt as per taste
Sugar – 1 tsp

Method
Soak soya chunks in water for 15 to 20 minutes and then squeeze out the excess water and remove in a bowl. To it add all the ingredients given for marinating and leave it aside for half an hour.
Heat 1 tbl.sp of oil in a pan, toss this soya chunks for 2 to 3 minutes and then remove it, you can even deep fry this. Remove and keep aside.
For the gravy
Heat oil in a pan, add ginger garlic and sauté for a minute and tehn add onions, green chilli paste, vinegar, tomato ketchup, salt, sugar, soya sauce and cook for few minutes.
Then add capsicum and soya chunks and corn flour paste. Cook for a minute till the gravy thickens.

Remove from fire, decorate it with spring onion and serve hot with fried rice.

Cauliflower Manchurian (Gobi manchurian)

Ingredients

Cauliflower – 500 gm

Chopped spring onion – 1 small bunch

Chopped ginger – 2 tsp

chopped garlic – 1 tsp

Maida or white flour – ¼ cup

Corn flour powder – 3 tbl.sp

Whole red chillies – 2

Red chilli powder – ¼ tsp

Oil -3 tbl.sp

Water – 1 ½ cup

Milk – 1 tbl.sp

 

 

Method

Wash and cut cauliflower and boil in water to which a tablespoon of milk has been added. Cook for 3 to 4 minutes. Drain and dry florets on a clean cloth. Make a batter of flour and 2 tbl.sp corn flour, ¼ tsp of ginger and garlic, red chilli powder and salt. Dip these florets in the batter and deep fry. Remove and keep aside on a absorbent paper.

In the same oil, add remaining ginger and garlic and crushed red chilli and sauté for few minutes. Add salt and spring onions, fry for a minute and then add water and bring it to boil. Take 1 tablespoon corn flour, mix in ¼ cup water till all the lumps are dissolved. Add this mixture gradually to the gravy till the gravy becomes transparent. Add florets and soya sauce. Boil for two to three minutes and serve hot.

Cauliflower Manchurian


Ingredients
Cauliflower – 1 kg
Onions – 3
Garlic – 10 flakes
Spring onions – 5
Tomatoes – ½ kg
Cumin seed – ½ tsp
Salt as per taste

Make a paste of
Red chillies – 10
Red chilli powder – 1 tsp
Garlic – 4 flakes

Method
Cut cauliflower into big flowerets. Take water in a pan, add 1 tsp salt and 1 tsp turmeric powder, add this pieces of cauliflower and boil for two minutes. Drain the water, and deep fry in oil till golden brown.
Blanch tomatoes, peel the skin and make into pulp. Cut onions and garlic into thin long slices. Cut spring onions into thin long pieces and fry till crisp and keep separately to garnish.
 Heat oil in a pan, add cumin seeds, garlic and then onion and fry till golden brown. Pour tomato pulp and cook till oil separates. Add ground chilies, salt and sugar to taste and then fried cauliflower. Sprinkle water if needed. Fry for few minutes till the gravy coats cauliflower. Garnish with fried spring onions.
