Kanda Potato Poha





Ingredients

Poha/flattened rice - 100 gm

Mustard seed - 1 tsp

Onion - 1 medium

Green chillies as per taste

Few curry leaves

Turmeric powder - 1/4 tsp

Potato - 1 small chopped

Peanuts - 1 tbl.sp

Juice of half lemon

Few corriander leaves for garnishing

Fresh coconut grated - 1 to 2 tbl.sp

Salt as per taste



Method

Wash poha and drain the water. Leave it aside.

Heat oil in a pan, add mustard seeds.

When it splutter add green chillies and curry leaves, fry for a second then add peanuts. Fry till it is cooked and then add onion and potato and cook till onion becomes little soft and potatoes are cooked.Add little salt to it, this will help onions to cook fast and potatoes will get little salty.

When onions are cooked, add turmeric powder, fry for a second and add poha to it. Mix it well. Add juice of half lemon, few chopped corriander leaves and garnish it with freshly grated coconut. Serve hot.

Rice Flakes laddo

Ingredients
Rice flakes – 1 cup
Sesame seeds – ½ cup
Dry coconut grated – 1 cup
Peanut – ½  cup
Jaggery as per taste
Chana dalia - 2 tbl.sp
Cardamom powder – ½ tsp
raisins for decoration

Method
Dry roast all these ingredients separately and blend it coarsely.
Melt jaggery in a double boiler.
Add all these ingredients in a bowl and to it add melted jaggery and cardamom powder.

Make small balls and decorate it with raisins and serve.

Riceflakes/Poha Pakoda

Ingredients
Besan/chickpeas flour – 75 gm
Rice flakes – 100 gm
Ginger garlic paste – 1 tsp
Green chilli – 2 chopped
Chopped onion – 1 cup
Rice flour – 2 to 3 tbl.sp
Cumin seed – 1 tsp
Few curry leaves
Few coriander leaves
Coarsely blended peanuts – 3 tbl.sp
Red chilli powder and salt as per taste

Method
Wash rice flakes and drain the water and keep aside.
Mix all the ingredients given, by adding little water.

Heat oil in a frying pan and deep fry this on a medium flame till golden brown in colour.

Kanda Poha (Maharashtrian Recipe)

Ingredients
Rice flakes/Poha – 1 cup
Onions – 2
Potato – 1
Crushed peanuts – ¼ cup
Green chillies – 3 chopped
Curry leaves – 6
Chopped coriander leaves – ¼ cup
Mustard seed – ½ tsp
Lime juice – 3 tsp
Oil
Salt to taste

Method
Wash poha or rice flakes and drain the water and keep aside. After ten to fifteen minutes, loosen the poha gently.
Chop onions and potatoes and keep aside.
In a pan, heat oil and add mustard seeds, when it splutter, add potatoes and crushed peanuts and stir for 2-3 minutes. Then add onion, chillies and curry leaves and stir till onion turns tender. Add poha, salt and lime juice and mix well. Reduce the flame and stir gently. Remove in a serving dish and garnish with coriander leaves.
