Manchurian Balls




 Ingredients

Cabbage finely chopped – 100 gm
Schezwan sauce – 3 to 4 tbl,sp
Ginger garlic and green chilli  paste – 1 tsp
Corn flour – 2 tbl.sp
All purpose flour – 4 to 5 tbl.sp
Salt as per taste
Food color – optional

Method

Combine all the given ingredients, sprinkle little water and make small round balls. Deep fry in hot oil and serve hot with tomato ketchup.

Veg Shami Kabab

Ingredients
Black gram/chana – 100 gms
Garlic – 4 to 5 flakes crushed
Red chilli powder – 1 tsp
Coriander powder – 1 tbl.sp
Cumin powder – 1 tsp
Turmeric powder – ¼ tsp
Besan/chickpeas flour – 2 tbl.sp
Yoghurt – 2 tbl.sp
Onion – 1
Coriander leaves
Lemon juice – 1 tsp
Salt as per taste

Method
Soak chana in water for 3 to 4 hours or overnight.
Blend it coarsely in a blender and mix all the other ingredients and make small flat tikkis.

Shallow fry in oil till golden brown in color. Remove and sprinkle chaat masala on top and serve hot with chutney.

Khaman Dhokla

Ingredients
Besan flour /chickpeas flour– 1 cup
Semolina – 2 tbl.sp
Ginger green chilli paste – 1 tsp
Oil – 1 tbl.sp
Water – ½ cup
Turmeric powder – ½ tsp
Yoghurt – ½ cup
Salt as per taste
Sugar – ½ tsp
Eno salt – 1 ¼  tsp
Lemon juice – 1 tsp
Freshly grated coconut
Coriander leaves for garnishing

For tampering
Mustard seed – 1 tsp
Sesame seed – ½ tsp
Asofoetida – a pinch of
Few curry leaves
Green chilli – 1

Method
In a bowl combine together besan flour, semolina, ginger green chilli paste, turmeric powder, salt, sugar, yoghurt, oil and lemon juice.
Mix it well by adding  half cup of water, the consistency should be like dosa batter.
Grease plate with oil.
Before steaming add eno salt to it and mix immediately. The quantity will increase. Pour this batter in the plate. Steam for 10 minutes.
Remove and leave it to cool.
Cut into small cubes.
Heat oil in a pan about one tbl.sp Tamper with mustard seeds, sesame seeds, asofoetida, curry leaves.
Garnish with freshly grated coconut and coriander leaves.

Soya Paneer Kabab

Ingredients

Soya granules – 2 cup
Paneer – 1 cup
Ginger – 1 inch
Green chilli – 1
Red chilli powder as per taste
Roasted cumin powder – 1 tsp
Garam masala – ½  tsp
Corriander leaves – 1 cup
Salt as per taste

For the chutney
Coriander and mint leaves – 1 cup
Green chilli as per taste
Garlic flakes – 2
Cumin seed – 1 tsp
Salt as per taste
Yoghurt – 1 cup

Method
Soak soya chunks in water for one hour and then squeeze out the excess water and blend it coarsely.
To this add all the ingredients given  except bread and blend it in a blender to a fine paste.
Add bread crumbs and make into small flat round balls and deep fry in oil.

For the chutney, Make a paste of all the ingredients given and mix with yoghurt and serve with soya paneer kabab.
