Kerala Banana Halwa



Ingredients
Kerala banana - 1 ripe
honey - 1 to 2 tsp
cinnamon powder - 1/4 tsp
chopped nuts
ghee or unsalted butter for cooking

Method
Peel banana and mash it in a bowl. Add honey and cinnamon powder to it and mix well and keep aside.
In a pan heat ghee, add chopped nuts and fry till golden brown in color.
Remove and keep aside.
Now in the same pan add mashed banana and cook on a low flame stirring continoulsy till it leaves the sides. Remove in a serving mould or plate and garnish with fried nuts.

Raw Banana Vada

Ingredients
Boiled Raw Banana -2
Gram dal/chana dal – 1 cup
Onion – 1
Coriander leaves
Ginger – 1 inch
Rice flour – 2 tbl.sp
Few curry leaves
Green chilli and salt as per taste

Method
Mash boiled raw banana.
Soak chana dal in water for 3 to 4 hours and then grind it coarsely along with green chillies, ginger, salt and curry leaves.
Remove in  a bowl, add chopped onions, mashed banana, coriander leaves and rice flour. Make small round balls and shallow fry in oil till golden brown in color. Serve hot with chutney or ketchup.

Banana Toffee

Ingredients
Bananas – 2  thickly sliced
Wheat flour – ½ cup
Refined flour – ½ cup
Cornflour – ½ cup
Pinch of salt
Baking powder – ¼ tsp
Vanilla essence – 1 tsp
½ cup of Sugar to caramelize

Method
Keep one bowl of water in the refrigerator.
Make a thick batter of wheat flour, refined flour, cornflour, salt and baking powder by adding little water.
Dip this banana slices in the batter and deep fry in oil till golden brown in color.
In another pan, put sugar and heat it till it caramelize.

Off the flame, coat this fried banana slices with this caramelize sugar and then dip in cold water. After a minute, remove it and serve.

Banana Murabba


Ingredients
Banana – 2
Lemon – ½
Sugar – 1 cup


Method
Cut banana into thin round slice and keep aside. In a pan, combine one cup sugar with half cup water and leave it to boil. When it starts boiling, add slice of banana and cook till it becomes little thick. Then add lemon juice to it and remove from fire and leave it to cool. This sour and sweet murabba taste too good.
Instead of lemon juice, you can even use orange juice to it
