Oats with Dry Fruits Laddoo



Ingredients

Take dry nuts like almonds, pistachio, walnuts,seedless dates, cashewnuts, raisins in any quantity you like.
 Jaggery  - 1 cup
oats - 1 cup
cardamom powder - 1 tsp
sesame seeds - 3 tbl.sp
nutmeg powder - 1/4 tsp
salt - 1/4 tsp
ghee/butter - 3 tbl.sp


Method

Dry roast almonds, pistachio, cashewnuts, walnuts and keep coarsely make a powder of it.
Dry roast oats for few seconds and keep aside.
Heat jaggery using 1 cup of water till one thread syrup. To it also add cardamom powder and nutmeg powder.
Heat ghee/butter in a pan add raisins. When it puffs up add sesame seeds, fry for a second and then add seedless dates.  Let the dates soften a bit and then add these coarsely powdered nuts, oats and salt and mix well. In the end add jaggery water and mix well. When little warm make round balls and refrigerate it. Have it daily in the morning on empty stomach . Its very good for health.

Sprouted Green Gram Cutlets with Oats

Ingredients
potatoes – 2
sprouted green gram (moong) – 100 gms
oats – 1 cup 
onion – 1 small
ginger – 1 inch
green chili – 2 or as per taste
garam masala – ½ tsp
fennel seed – ½ tsp
cumin seed – ½ tsp
few curry leaves
salt as per taste
half of lemon juice
coriander leaves

Method
Boil and mash potatoes, cook sprouted moong  or green gram till soft.
Heat  2 tsp of oil in a pan, add cumin seed and fennel seed, when they splutter, add crushed ginger and finely chopped green chillies and sauté for a minute, then add curry leaves.
Add onions and sauté till it becomes soft, then add boiled potatoes and sprouted green gram, salt and garam masala and mix well. Add lemon juice and coriander leaves.
Remove from fire, leave it to cool, then add oats to it and mix well.
Make small round flat tikkis and coat with oats and shallow fry in oil till golden brown in colour. Serve hot with tomato ketchup.

Oats Vegetable Pancake

Ingredients
Oats – 1 cup
Semolina/rava – ½ cup
Carrot – 1 grated
Capsicum – 1 finely chopped
Few chopped spinach leaves
Ginger – 1 inch chopped or paste
Green chilli as per taste finely chopped
Cumin seed – 1 tsp
Garam masala – ½ tsp
Coriander leaves – ½ cup
Yoghurt – 1 cup
Salt as per taste

Method
Roast oats in a pan and then powder it. Mix it with semolina and all the ingredients given.  You can add little water if you like. The batter should be like dosa batter.
Leave it to rest for half an hour.
Heat a tava, take one big spoon of this batter and spread in a circular way.

Cook on both the sides evenly till golden brown in color and serve hot with chutney.

Chatpati tikki

 Ingredients
Potato – 3
Oats/bread crumbs – 1 cup
Ginger green chilli paste – 1 tsp
Coriander leaves – ¼ cup
Salt
For garnishing
Sweet chutney
Green chutney
Chopped Onion
Coriander leaves
Nylon sev

Method
Boil and mash potato, add ginger green chili paste, oats/bread crumbs, coriander leaves and salt.
Make small flat round tikkis , coat it with oats and shallow fry in oil.
Remove in a serving plate.
Put sweet chutney and green chutney on top, then add chopped onions and coriander leaves and sprinkle nylon sev on top and serve.

Wheat Oats Kheer

Ingredients
Wheat – 1 cup
Rice – 2 tbl.sp
Oats – 1 cup
Milk – ½ litre
Jaggery as per taste
Cardamom powder – ½ tsp
Nutmeg – a pinch of
Dry ginger powder – ½ tsp
Coconut milk – 1 cup
Dry nuts for garnishing
Ghee/butter

Method
Soak wheat and rice in water for 6 to 7 hours and then drain the water and grind it coarsely. Add water and cook it till it becomes soft.
Fry oats in ghee, remove and keep aside.
Boil two cups of water, add jaggery and cook till it is completely dissolved.
In a pan, heat water, add cooked wheat and rice and cook for 2 to 3 minutes, then add fried oats, melted jaggery, nutmeg powder, dry ginger powder, cardamom powder, milk and coconut milk and cook till it becomes little thick.
Remove from fire and garnish with dried nuts like almonds, cashewnuts and raisins.

Oats and Soya Adai

Ingredients
Soya flour – ½ cup
Oats – ½ cup
Urad dal – ¼ cup
Moong dal – ¼ cup
Chana dal – ¼ cup
Tovar dal – ¼ cup
Finely chopped onion – 1
Tomato – 1 chopped
Green chilli or red chilli flakes as per taste
Ginger garlic paste – 1 tsp
Coriander leaves – 1 cup
Salt as per taste

Method
Soak urad dal, tuvar dal, moong dal, chana dal in water for 5 to 6 hours. Then grind it into a fine paste.
Add oats, soya flour, chopped onion, tomato, coriander leaves, green chilli, ginger garlic paste, coriander leaves and salt and mix it well.  The batter should be like dosa batter.
Heat a non stick dosa pan and pour one spoon of batter on the pan and spread it in a circular way. After two minutes, turn and cook on the other side.

Remove in a plate and serve hot with chutney.

Oats and Soya Cookies

Ingredients
Wheat flour – ½ cup
Soya flour – ½ cup
Oats – ½ cup
Baking powder – 1 tsp
Butter – 1 tbl.sp
A pinch of salt
Sugar – 1 cup or as per taste
Honey – 2 tsp
Juice of 1 lemon
Walnut

Method
Mix together all the ingredients and knead it to a soft dough by adding  little water. Add crushed walnut to it and leave it to rest for few minutes.
Grease the tray with oil.

Make small flat round balls and bake it in the oven at 180 degree for about 10 to 15 minutes.
