Lapsi Rava Kheer | Broken Wheat Kheer | Payasam Recipe



Ingredients
Lapsi rava/ broken wheat - 200 gm
Jaggery - 1 cup or as per taste
Cardamom powder - 1/4 tsp
Chopped dry nuts and raisins - 1 cup
Cardamom powder - 1/2 tsp
Nutmeg powder - 1/2 tsp
MIlk - 1/2 litre

Method
Heat a tbl.sp of ghee/butter in apan and add chopped nuts and raisins and fry till raisins puff up.
Remove and keep aside.
In the same fry lapsi rava or broken wheat for 2 to 3 minutes.
Add water and pressure cook till 3 to 4 whistle or till soft.
Open the lid, add jaggery, cardamom powder, nutmeg powder and milk. Mix it well and let it cook on a medium flame.
As it becomes warm, it will become more thick, so you can add more milk as required.
Garnish with fried nuts and raisins. Serve hot or cold.

Sweet Coconut Semolina/Suji Recipe



Ingredients
 roasted semolina - 1 cup
jaggery - 1 cup
paste of 1/4 coconut
cardamom powder - 1 tsp
a pinch of nutmeg powder
saffron color
few nuts and raisins

Method
In a bowl add semolina and jaggery.  Make a paste of coconut by adding little water and add it to semolina. Mix it well and let it rest for half an hour.
Heat butter in a pan and add  chopped nuts and raisins. Fry till raisin puffs up. Add semolina mixture to it, mix well. cover and let it cook till done. Keep stirring in between. When done, add a pinch of nutmeg powder and saffron color. Serve hot.

Jalebi Recipe


Ingredients
All purpose flour – 1 cup
Yoghurt – ½ cup
Sugar – 1 cup
Water – ¾ cup
Cardamom powder – ½ tsp
Few saffron threads
food color

Method

In a bowl, combine together yoghurt and all purpose flour, add little water to make it a pouring consistency. Add cornflour, if the batter has become too thin. Cover and leave it to ferment for another 24 hours.

Next day, again knead it for 10 to 15 minutes.  Add food color to it.
Take a plastic bag, pour the batter into it. Keep oil for heating, when the oil is hot,  start making jalebis. Deep fry in hot oil.

Make one thread sugar syrup by adding water, cardamom powder and few saffron thread.

Dip this jalebis into it, so that it is coated well with sugar syrup.

Remove and serve hot.

Chocolate Malpua

Ingredients

For making Malpua
Wheat flour/all purpose flour – 1 cup
Milk – ¾ cup or more
Sugar – 1 tsp
Salt – a pinch
Cinnamon powder – ¼ tsp
Cottage cheese (paneer) – 3 tbl.sp
Yogurt – 1 tbl.sp

Sugar syrup
Sugar – ½ cup
Water – ½ cup

Chocolate sauce (Check my recipe for chocolate sauce)

Method
Mix all the ingredients given for malpua and make a batter of pouring consistency.

Make a sugar syrup and keep aside.

Heat a pan, shallow fry or deep fry small pancakes.
Dip in sugar syrup for few seconds, remove in a plate and pour little chocolate sauce on top.

Sheera (Sweet Semolina Recipe)

Ingredients
Semolina – 1 cup
Sugar – 1 cup
Milk – 1 ½  cup
Water – ½ cup
Cardamom powder – ½ tsp
Chopped almonds, cashew nuts and raisins
Ghee/butter

Method
Heat ghee/butter in a pan. Add chopped nuts and raisins and stir fry for a minute till the color changes to golden brown in color.
Then add semolina and again fry for few minutes till you get  a nice aroma. Add milk, water, cardamom powder and sugar. Mix well and leave it to simmer on a low flame till all the moisture is absorbed.

Serve hot.

Apple Halwa

Ingredients
Apple – 3 to 4 big one
Sugar – 4 tbl.sp
Cinnamon powder – 1 tsp
Vanilla essence – 1 tsp
Ghee/butter – 1 tbl.sp

Method
In a pan heat ghee/butter and add grated or chopped apple.
Cook for 4 to 5 minutes till it becomes soft. Mash it.
Add one tbl.sp of water, mix well and cook on a low flame for 10 to 15 minutes till it becomes thick. Keep on stirring or else it will burn.
Add sugar, cinnamon powder and vanilla essence, mix well and cook for 2 to 3 minutes.
Add chopped nuts, mix well and remove from fire.
Remove on a plate, spread evenly, it should be 1 inch thick squares when cut.
Decorate with chopped nuts and serve warm or cold.
Cinnamon powder and vanilla essence should be added more or less as per your taste.

Makhana Kheer

Dry puff lotus seed (makhana) – 1 cup
Milk – ½ litre
Condensed milk – 100 ml
Cardamom powder – ½ tsp
Vanilla essence – ¼ tsp
Few chopped nuts like almond, pistachio,cashewnut

Method
Heat about one tbl.sp of ghee in a pan and fry makhana for 2 to 3 mintues on a low flame.
Remove and blend it to a fine paste by adding little milk to it.
In a pan, heat milk, add condensed milk, cardamom powder and vanilla essence and bring it to boil.
When it starts boiling add makhana paste to it, mix well and cook for 2 to 3 minutes.
Remove from fire, garnish with chopped nuts.
Refrigerate before serving. Serve chilled.

Paneer Ki Kheer

Ingredients
Milk – ½ litre
Paneer/chenna – 100 gms
Condensed milk – 100 gms
Cardamom powder – ½ tsp
Chopped nuts
Few Saffron Threads

Method
Heat milk in a pan, when it starts boiling add chenna and condensed milk and stir. Keep on cooking it till it is reduced to half. Keep on stirring it at regular intervals.
When it is reduced to half add cardamom powder, half of chopped nuts and saffron threads and cook for 2 to 3 minutes on a low flame.
Remove from flame, garnish with chopped nuts.

Refrigerate before serving.

Dudhi Phirni (bottle gourd recipe)


Ingredients

Bottle gourd – 250 gm
Milk – 1 litre
Condensed milk – ½ can
Milk powder – 2 tbl.sp
rice - 2 tbl.sp
Dry fruits – 2 tbl.sp
Cardamom powder – ½ tsp
Ghee/butter – 2 tbl.sp
Saffron soaked in milk

Method
Peel the skin and grate bottle gourd(dudhi)
soak rice in water for one hour and then grind it coarsely.
Heat ghee in a pan, and fry this grated bottle gourd for 2 to 3 minutes and remove and keep aside.

In the same pan, add milk and leave it to boil. When it starts boiling,add rice and cook till the rice has become soft and tender.
 Add condensed milk, then add grated bottle gourd, cardamom powder, milk powder and cook for 2 to 3 minutes.

Remove from fire and garnish with  dry fruits and saffron and serve.

Kansar

Ingredients
Wheat flour/ Kansar flour– 1 cup
Jaggery – ½ cup
Water – 1 ½ cup
Ghee – 2 tsp
Cardamom powder – 1 tsp
Powdered sugar as per your taste

Method
In a bowl, mix together wheat flour and one tsp ghee and keep aside.
In a pan, cook water and jaggery on a high flame, when the water starts boiling, reduce the flame and add wheat flour paste and one tsp of ghee and stir it with a rolling pin. Cover and cook till all  the water is absorbed.
Keep stirring in between. Add cardamom powder and one tsp of ghee.

Sprinkle powdered sugar before serving.
