Mango Phirni | Aam Ki Phirni





Ingredients

Mango - 2

Rice - 1 cup

Milk - 1/2 litre

Sugar - 1/4 cup

Condensed milk - 1/4 cup

Cardamom powder - 1/2 tsp

Sliced almonds for garnishing



Method

Soak rice in water for 1 to 2 hours.

Take out pulp of mango and blend it to a fine paste.

Coarsely make a paste of rice adding little water.

Heat a pan and pour milk into it and let it boil.

Add rice paste, mix well and keep on continously stirring it till rice is cooked well and it becomes thick.

Off the flame and let it cool down. When it cools, it will become more thick. Add mango pulp, mix well. Serve in a bowl and garnish with sliced almonds.

Refrigerate before serving.

AamRas Recipe | Mango Recipe





Ingredients

Ripe mango - 4

Ginger - 1/2 tsp

Nutmeg powder - 1/4 tsp

Cardamom powder - 1/2 tsp

Jaggery - as per taste

Little saffron soaked in milk



Method

Blend together all the ingredients to a fine pulp. add saffron to it. Mix well and serve with or without puri.

Raw Mango Raita | Raw mango Kadhi | Kairi ki Kadhi





Ingredients
Raw mango – 4 peeled
Turmeric powder – ½ tsp
Red chilli powder – 1 tsp
Roasted cumin powder – 1 tsp
Salt – ½ tsp or as per taste
Jaggery – 3 to 4 tbl.sp or as per taste

For tempering
Mustard seed – 1 tsp
Cumin seed – 1 tsp
Red chilli – 2 to 3 chopped
Few curry leaves

Method
Wash and peel raw mango.  In a presuure cooker, add mango, 2 to 3 cup
of water, turmeric powder, cumin powder, chilli poweder, salt and jaggery.
Pressure cook till 4 to 5 whistle.
When cooked remove in a bowl.
For tempering
Heat oil in a pan, add mustard seed and
cumin seed, when it splutter, add red chilli cut into half and few curry
leaves.  Pour on the raita and serve hot
with rice or roti.

Mango and Coconut Burfi Recipe


Ingredients
Pulp of 3 mangoes
Coconut – 5 tbl.sp
Cream -3 tbl.sp
Condensed milk – 400 gm
Cardamom powder – ¼ tsp
Few chopped nuts for garnishing

Method
First lightly roast coconut for few seconds then to it add condensed milk , cream and cardamom powder. Cook till the consistency is thick and dry. Keep stirring all the time. When it becomes thick add mango pulp and again keep cook till it becomes thick.
Remove on a greased plate. Spread it evenly and garnish with chopped nuts. When cooled down. Cut into pieces and serve.

Fruit Salad with Mango Pudding


I

Ingredients
Pulp of 2 mango
1/2 can condensed milk
1/4 cup cream
chop mix fruit of your choice
few walnuts
almonds and pistachio for garnishing

Method
Blend mango pulp, condensed milk, cream and walnuts. Refrigerate this for few hours.
Take fruits of your choice, cut into small pieces and put in a serving bowl. Pour this blended mixture on it and garnish with chopped almonds and pistachios.

Mango Kulfi







Ingredients
Milk – 300 ml
Pulp of two mangoes
Condensed milk – ½ tin
Cream – 125 ml
Corn flour – 2 tsp

Method
First mix together milk and corn flour and cook till it
starts boiling.
Remove from fire and add to it mango pulp, condensed
milk, cream and whisk till everything is blended well.
Pour this in a kulfi mould and leave it to set. Serve
soft and creamy mango kulfi

Lemon Flavored Mango Pudding





Ingredient
Pulp of 2 mango
Condensed milk – ½ tin
Lemon flavored gelatin – 1 cup
Few Chopped mango pieces

Method
Prepare gelatin as per instruction given.
Combine together pulp of mango and condensed milk and
whisk it till both are blended well. Add one cup of  lemon flavored gelatin and again whisk it. Take
a bowl, first add ½ cup of gelatin and then this mixture, put few chopped mango
pieces and leave it to set.


Cut into pieces and serve.

Mango and Sago Pudding





Ingredients
Milk – ½ litre
Sugar – ½ cup
Sago – ½ cup
Mango pulp – ½ cup
Pinch of nutmeg powder
Chopped mangoes and powdered dry nuts for garnishing

Method


Heat milk in a pan, to it add sago, sugar and cook till
sago becomes transparent and milk becomes little thick. Remove from fire; add
nutmeg powder and mango pulp. Mix well. Garnish with chopped mangoes and
powdered nuts.

Mango Salsa

Ingredients
Mango – 1 big
Onion – 1 small
Green chilli – 1
Lemon juice – 2 tsp
Salt and pepper as per taste
Coriander and mint leaves

Method
Combine all the ingredients together in a bowl and leave
this to set in the refrigerator for half an hour till all the flavours are very
well incorporated with each other.
Serve with nacho chips.a

Mango Shrikhand







Ingredients
Mango pulp of two mangoes
Hung curd – 400 gms
Cardamom powder – ½ tsp
Powder sugar – as per taste
Few saffron threads
Pistachio chopped for garnishing

Method


Make a pulp of two mangoes,
add hung curd, sugar and cardamom powder to it, if the mangoes are little sour
then add more sugar. Whisk it well till it becomes smooth. Garnish with saffron
threads and pistachio and serve cold.
