Spicy Cucumber Pancake



Ingredients
cucumber - 2 medium
paste of one medium onion
ginger garlic paste - 1 tsp
yoghurt - 2 tbl.sp
turmeric powder - 1/4 tsp
red chilli powder and salt as per taste
wheat flour dough - 1 cup
chopped corriander leaves

Method
Mix all the ingredients together and make thick batter. Heat a pan and with the help of a spoon spread like a dosa on the pan. Cook on both the sides and serve with pickle or ketchup.

Cinnamon Coconut Pancake with Oats

Ingredients
Coconut milk – 1 ½  cup
Refined flour – ½ cup
Oats – ½ cup
Eggs – 2
Vanilla – ½ tsp
Dessicated coconut – ¼ cup
Baking soda – ¼ tsp
Cinnamon powder – ½ tsp
Sugar – ½ cup or as per taste
Salt – a pinch of

Method
In a bowl, add coconut milk, egg, vanilla, cinnamon, salt and sugar and whisk until well combined.
In another bowl, combine together maida, oats and baking soda.
Then gradually add maida and oats mixture and mix till it is very well incorporated. Add dessicated coconut to it and again mix well. The batter should be of pouring consistency.
Heat a pan and Add  2 tsp of ghee or butter to the pan, add one spoon of this batter to the pan, when it starts to bubble, flip to the other side and cook evenly on both the side.
Serve hot.

Lime Pancake


Ingredients
Wheat flour – 100 gm
All purpose flour – 100 gm
Egg - 1
Powdered Sugar – ½ cup or as per taste
Vanilla essence – 1 tsp
Buttermilk – 100 gm
Baking powder – ½ tsp
Baking soda – ½ tsp
Lemon juice – 1 tsp
Salt a pinch
Sesame seeds to sprinkle on top
Honey

Method
First combine powdered sugar and egg and whisk it for 4 to 5 minutes. Then add wheat flour, all purpose flour, baking powder, baking soda, lemon juice, butter milk, vanilla essence and salt.
Make a thick pouring batter, you can add little water if needed.

Heat a pan, add ghee or butter and then pour one spoon of this batter, make a thick round circle, sprinkle little sesame seeds on top. When cooked, flip to the other side and let it cook on both the sides till golden brown in colour. Remove on a serving plate. Drizzle little honey on top and serve.

Oats Vegetable Pancake

Ingredients
Oats – 1 cup
Semolina/rava – ½ cup
Carrot – 1 grated
Capsicum – 1 finely chopped
Few chopped spinach leaves
Ginger – 1 inch chopped or paste
Green chilli as per taste finely chopped
Cumin seed – 1 tsp
Garam masala – ½ tsp
Coriander leaves – ½ cup
Yoghurt – 1 cup
Salt as per taste

Method
Roast oats in a pan and then powder it. Mix it with semolina and all the ingredients given.  You can add little water if you like. The batter should be like dosa batter.
Leave it to rest for half an hour.
Heat a tava, take one big spoon of this batter and spread in a circular way.

Cook on both the sides evenly till golden brown in color and serve hot with chutney.
