Paneer and Bread Croquettes





Ingredients
Paneer – 100 gm
Potato – 2 boiled
Bread slices – 3
(sides removed)
Ginger paste – 1
tsp
Green chilli
chopped – 2
Red chilli powder –
1 ½ tsp
Cumin powder – 1
tsp
Chaat masala – 1
tsp
Salt as per taste
Few chopped
coriander leaves
For coating
All purpose flour –
1 tbl.sp
Corn flour – 1
tbl.sp
Bread crumbs
Method
Mix  together all the ingredients given and make oblong
shape balls.
Make a paste of all
purpose flour and corn flour using little water and keep aside.
Dip this balls in the
corn flour paste and then roll on bread crumbs. Deep fry in oil till golden
brown in color and serve hot with ketchup.

Vada Pav | Batata Vada | Mumbai Street Food



Ingredients
Potato boiled- 4
Ginger crushed - 1 inch piece
Garlic - 4 crushed
Green chilli - 2
Mustar seed - 1 tsp
Black gram dal - 1 tsp
Turmeric powder - 1/4 tsp
Few curry leaves
Few corriander leaves
Salt as per taste
Few ladi pav
Garlic chutney

For the batter
Chickpeas flour - 1 cup
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Salt as per taste

Method
First boil potatoes and peel the skin.
Heat 2 tsp of oil in a pan and to it add mustard seed and let it splutter. Add urad dal and fry for few seconds. Add ginger and  green chilli and saute for few seconds. Then add few curry leaves and then boiled and mashed potato, turmeric powder, salt and corriander leaves. Mix well and let it cool down.

In another bowl, make a  smooth batter of the ingredients given by adding little water.

Make small round balls of the pototo masala and dip in the batter. Deep fry in oil till golden brown in color. Remove on a tissue paper.

Take ladi pav, open it and spread little garlic chutney inside and place one potato vada and serve.

Veg Puff Pastry- Puff Pastry Sheet Recipe



Ingredients
for the puff pastry dough
all purpose flour - 250 gm
a pinch of salt
butter - 250 gm
cold water to which juice of half lemon is added

for the stuffing
Mix vegetables boiled - potato, carrot, green peas, french beans
onion - 1 medium
green chilli - 1 chopped
ginger grated - 1 tsp
red chilli powder - 1 tsp
turmeric powder - 1/4 tsp
garam masala - 1/2 tsp
chaat masala - 1 tsp
few chopped corriander leaves
salt as per taste

Method

for making the dough
Knead dough by uisng ice cold water and cover and refrigerate it for half an hour. Remove and again roll it with the help of a rolling pin. Spread butter on it. Sprinkle some flour and fold it first on one side and then on the other side overlapping each other. Refrigerate this for 20 minutes. Repeat this 3 to 4 times.


for the stuffing
Boil vegetables and cook aside.
Heat oil in a pan, add cumin seed and let it sputter. Add green chilli and crushed or grated ginger and saute till raw smell goes. Add sliced onions and cook till translucent.. Add boiled vegetables and all the powdered masala and corriander leaves and mix well. Cook for 2 minutes. Mash all the vegetables.

Take  the pastry dough, roll it and  cut into small squares. Place this stuffing and cover it properly.
Bake it in an oven till it is cooked golden brown in color on both the side .
 You can put any stuffing of your choice.

Cheese Spinach Toasty




Ingredients
onion - 1
tomato - 1
spinach leaves - 4 to 5
garlic cloves - 4 to 5 small
sweet chilli sauce - 1 to 2 tsp
chaat masala - 1 tsp
salt and pepper as per taste
few bread slices
mozirella cheese
cheddar cheese


Method
Slice onion and tomato. Chop spinach leaves finely. Chop garlic flakes.
In a bowl mix together onion, tomato, cheese, salt and pepper, sweet chilli sauce, chaat masala and keep aside.
Heat one tsp of oil in a pan add garlic flakes and fry for few seconds without changing its color.
Then add spinach leaves and cook for 2 minutes. Remove and mix with other ingredients.

Take bread slices place this mixture on it and cover it with another bread slice.
Toast it on a pan by adding little ghee or butter. Serve hot with or without ketchup.
