Baked Spicy Masala Crackers


Ingredients
 Wheat flour –  4 cups (400 gm)
All purpose flour –
1 cup (100 gm)
Ginger grated – 1
tsp
Green chilli – 2
chopped finely
Few chopped
coriander leaves
Few chopped
fenugreek leaves or 2 tsp of kasuri methi
Black pepper
powdered – 2 tsp
White or black
sesame seeds – 2 tsp
Cumin seed – 2 tsp
Butter milk – 2 to
3 tbl.sp
Melted butter – 2
to 3 tbl.sp
Baking powder – ½
tsp
Salt – 1 tsp
Method
In  a bowl sieve together wheat flour, all
purpose flour, salt and baking powder. Then add melted butter and mix it till
it forms bread like consistency. Then add rest of the ingredients with little
water and knead to a stiff dough. Let it rest for half an hour.
After half an hour,
again knead it and then take one small ball and roll it. It should be not very
thick.
Cut in to shapes
you desire. Prick it with a fork so that it does not puff up.


Preheat oven at 180
degree celcius and then grease the plate with little oil and bake it on both
the sides till done.

Eggless Indian Cookie Recipe (Naan Khatai)

Ingredients
Refined flour/maida – 1 cup or ½ cup refined flour and ½ cup wheat flour
Sugar – ½ cup
Butter – ½ cup
Coarsely powdered cashew nuts and almond along with ½ tsp of cardamom powder
Baking soda – ¼ tsp

Method
Combine sugar and butter and whisk till it becomes soft and fluffy.
Then add baking soda, powdered cashewnuts, almonds and cardamom powder along with baking soda.
Mix well and add refined flour and knead to make a soft dough.
Make small balls and decorate with pistachio.
Bake at 160 degree celcuius for 10 to 12 minutes.
As they cool down, they becomes little hard.

Refrigerator Cookies

Ingredients
Unsalted butter – 4 tbl.sp
Powdered Sugar – ½ cup
Baking soda – ¼ tsp
Refined flour/maida – 2 cup
Salt – ½ tsp
Vanilla essence – 1 tsp
Cinnamon powder – ½ tsp

Method
Sieve refined flour, baking soda, cinnamon powder and salt.
Beat together unsalted butter, powdered sugar and vanilla essence until creamy.
Gradually add flour mixture and knead it like dough.
Divide it into two balls and roll it like roti.
From one end star rolling in a circular motion and cover it with a plastic or butter paper.
Refrigerate it overnight.

Next day, cut into thin round slices. Greased the tray with butter and bake it in the oven for about fifteen minutes.
