Tomato Rasam




Ingredients
tuvar dal - 3 tbl.sp
tomato - 4
ginger - 1 small piece
turmeric powder - 1/2 tsp
asafoetida -1/4 tsp
tamarind pulp - 2 tbl.sp
sugar - 1 tsp'
salt as per taste

for making rasam podi/masala
corriander seed - 1 tbl.sp
cumin seed - 1 tsp
black pepper pods - 1 tsp
masoor dal - 1 tsp
urad dal - 1 tsp
chana dal - 1 tsp
fenugreek seed - 1/4 tsp
mustard seed - 1/2 tsp
red chillies - 3


for tempering
red chillies - 1
mustard seed - 1 tsp
few curry leaves

Method
Cook tuvar dal in enough water along with tomato, ginger, turmeric powder, asafoetida.
Dry roast the ingredients given for rasam and blend it to a fine powder.
when dal is cooked, blend it well and add rasam masala, tamarind pulp, sugar and salt and cook for two minutes.
Temper it with given ingredients and serve hot.

Tomatoes and Green Peas Soup


Ingredients
Tomato – 250 gm
Green peas boiled – 1 cup
Onion – 1
Carrot – 1 grated
Cream –  1 tsp
Tomato sauce – 2 tbl.sp
Garlic flakes – 2
All purpose flour – 1 tsp
Milk – ½ cup
Cinnamon – 1 small piece
Cloves - 2
Vegetable stock
Salt and pepper as per taste

Method
Boil green peas, grate carrot, chop tomatoes.
Heat butter in a pan, add garlic cloves, sauté forfew seconds and then add cloves, cinnamon.  Stir fry for a minute and then add chopped onion.
When onion turns transclucnet add all purpose flour and stir fry for few seconds and then add vegetable stock, tomato and carrot. Leave it to boil. When it starts boiling, strain the water (blend the leftover tomato and carrot and again add to the soup, this will give thickness to the soup)
To the soup add boiled green peas, tomato sauce, milk and salt and pepper.
Garnish with cream and serve hot.

Manchow Soup

Ingredients
Mixed vegetables – 1 cup (Finely diced carrot , grated cabbage, chopped French beans, chopped capsicum)
Finlely chopped garlic – 5 to 6
Soya sauce – 1 tsp
Vinegar – 1 tsp
Green chilli sauce – 1 tsp
White pepper and salt as per taste
Cornflour – 2 tsp

Method
Heat 2 tsp of oil in a pan, add carrot and sauté for a minute and then add chopped garlic and fry for few seconds and then add all the other vegetables, stir fry for a minute and then add soya sauce, vinegar, green chilli sauce, white pepper and salt and leave it to boil.

When it starts boiling, add cornflour dissolved in cold water to it and bring it to boil. Cornflour will give a body to the soup and make it little thick. Remove from flame and serve hot.

Sweet And Sour Cabbage Soup

Ingredients
Cabbage – ½ chopped
Olive oil – 2 tbl.sp
Cider vinegar – ½ cup
Sugar – 2 tbl.sp
Soya sauce – 1 tsp (optional)
Ground pepper and salt as per taste
Method
Heat olive oil in a deep frying pan and then add cabbage and cook until golden brown stirring in between. Then add sugar, cider vinegar and 1 ½ cup water and cook on a low flame until the cabbage is tender. Cook for 12  to 15 minutes and serve with salt and pepper.

Chicken Soup

Ingredients
Chicken bones – 500 gm
Boneless chicken – 100 gm
Refined flour or maida – 1 ½ tsp
White pepper powder – ½ tsp
Cumin seeds – ½ tsp
Chopped garlic – 1 tsp
Butter – 1 tsp
Oil – 1 tsp
Water – 1 litre
Salt to taste

Method
Clean and wash chicken bones and boneless chicken. Cut boneless chicken into very small pieces.  Put chicken bones and chopped garlic in a pot with one litre of water and cook till it is reduced to half. Strain and keep the stock aside.
Fry boneless chicken pieces in ghee or butter till tender.
Heat oil and add to it cumin seeds and maida or white flour (mix with water) and cook for a minute stirring continuously.  Then add chicken stock, boneless chicken pieces, white pepper powder and salt. Cook for some time and serve hot.
You can also add fresh cream before serving.
