Lemon Flavored Mango Pudding





Ingredient
Pulp of 2 mango
Condensed milk – ½ tin
Lemon flavored gelatin – 1 cup
Few Chopped mango pieces

Method
Prepare gelatin as per instruction given.
Combine together pulp of mango and condensed milk and
whisk it till both are blended well. Add one cup of  lemon flavored gelatin and again whisk it. Take
a bowl, first add ½ cup of gelatin and then this mixture, put few chopped mango
pieces and leave it to set.


Cut into pieces and serve.

Cashew nut Pudding Recipe


Ingredients
Cashew nuts – 1 cup
Coconut milk – 1 cup
Milk powder – 2 tbl.sp
Sugar – as per taste
Cardamom powder – ½ tsp
Nutmeg powder – ¼ tsp
Saffron soaked in water

Method
Make a paste paste of cashewnut by adding coconut milk, milk powder, sugar and  cardamom powder.
Pour this in a container. Sprinkle nutmeg powder and saffron water on top.
Place this container in a steamer or pressure cooker without the whistle.
Steam for 30 to 40 minutes. Prick it with a knife and check.
If it comes out clean, then it is ready.

Refrigerate this for few hours before serving.

Bread Pudding Recipe

Ingredients
Bread slices – 5 to 6
Butter – 2 tbl.sp
Full cream milk – 2 cup
Sugar – as per taste
Jam any flavor
Chopped nuts for garnishing

Method
Spread butter and jam on each slice of bread and arrange it on a greased baking dish.
Whisk together milk and sugar, along with chopped nuts and pour over the bread.
Place it in a preheated oven at 180 degree celcuis for 20 minutes.
Remove and leave it to cool.
Decorate with jam and serve.

Apple Cinnamon Pudding

Ingredients
Bread – 7 to 8 coarsely blended
Milk – ½ litre
Eggs - 3
Sugar – 1 cup or as per taste
Apple – 2 cups peeled and diced
Cinnamon powder – 1 tsp
Vanilla essence – 1 tsp
Few raisins
Butter – 3 tbl.sp

For caramel
Sugar – 2 tbls.p
Water – 2 tsp
Method
Caramelize sugar by adding sugar and water in a pan and heat it on a low flame stirring it continousley till it turns golden brown in color.
Pour in a pudding mould and leave it to cool.
In another bowl, whisk together milk, butter, egg, sugar, vanilla essence, cinnamon powder, to this add bread crumbs and diced apples. Stir to mix properly.
Cover it with an aluminum foil and steam it in a pressure cooker for half an hour.
Prick with a tooth pick, if it comes out clean, then it is done.

Remove and leave it to cool at room temperature. Then refrigerate it and serve chill.

Egg Pudding


Ingredients
Egg – 3
Milk – 2 cups
Sugar – ¾  cup or as per taste
Vanilla essence – 1 tsp
Few raisins

To caramelize sugar
Sugar – 1 tbl.sp
Water – 1 tsp

Method
For Caramel- In a mould add sugar and water and heat it on a low flame stirring continuously till it turns golden brown. Remove and keep aside.

In another bowl, mix together egg, milk, vanilla essence and sugar and beat it with a hand mixer or in a blender till bubbles are formed.

Pour in the mould where you have caramelized sugar, add raisins to it, cover it with a silver foil and steam for half an hour or more till it is cooked.

Prick with a knife or a tooth pick, if it comes out clean, then it is done, remove and leave it to cool at room temperature.

After some time refrigerate it to chill.

When ready, serve.
