Chicken Veg Roll



Ingredients
all purpose flour - 1 cup
dry yeast - 1 tbl.sp
sugar - 1 tsp
salt - 1/2 tsp
chopped vegetables like capsicum, spring onion,
grated carrot
chilli flakes, salt and pepper as per taste
grated cheese


Method
In a bowl, take 1 tbl.sp of yeast and add sugar and salt to it. Add lukewarm water to it and mix well.
Leave it aside till it becomes frothy.
Take a cup of all purpose flour and add yeast mixture to it and knead it to a soft dough. Cover and leave it to rest till it doubles in size.
when it is double in size, roll a thick chapati. spread on it chopped vegetables like capsicum, spring onion, grated carrot, boiled and minced chicken,chilli flakes, pepper and salt , grated mozerella and cheddar cheese. Roll it tightly
Bake it in a preheated oven at 180 degree celcius for 15 to 20 minutes. Cut it and seve hot.

Chicken Malai Kabab

Ingredients
Boneless Chicken – ½ kg
Ginger garlic paste – 2 tsp
Cornflour – ¼ cup
White/black pepper powder – 1 tsp
Cardamom powder – ½ tsp
Nutmeg powder – a pinch
Cream – ½ cup
Cheese – ½ cup
Yoghurt – ½ cup
Paste of coriander and green chilli
Salt as per taste
Lemon juice – 1 tsp
Onion rings for garnishing
Coriander leaves for garnishing

Method
Cut chicken pieces into medium size and then marinate it with ginger garlic paste, coriander and green chilli paste, cardamom powder, nutmeg powder, cumin powder, pepper powder , yoghurt and salt.
Leave it to marinate for half an hour.
Then add cheese and cornflour, mix well and then add cream and fold it lightly.
Leave this to marinate for another one hour.
Take a baking tray covered with silver foil.
In a skewer, skew this chicken pieces, drizzle it with marinated masala and little oil and bake in a preheated oven at 180 degree celcius for 20 to 25 minutes.
Sprinkle lemon juice on top and garnish with onion rings and coriander leaves and serve hot with naan or paratha.

Chicken Tikka

 Ingredients
Boneless chicken – 500 gm
Red chilli powder – 1 tsp
Ginger garlic paste – 1 tbl.sp
Yoghurt – ¼ cup
Garam masala – ½ tsp
Pepper powder – ½ tsp
Lemon juice – ½ tsp
Orange food colour – ½ tsp
Coriander leaves – ½ cup
Salt as per taste
chaat masala

Method
Wash the chicken and remove all the fat from it.
Combine all the given ingredients and add it to the chicken and mix well.
Leave it to marinate for an hour or overnight.
Heat oven at 200 degree celcius and cook for 35 to 40 minutes.
Sprinkle little chaat masala powder on it and serve hot with onion rings and lemon slices.

Baked Chicken In Corn

Ingredients
Chicken – ½ kg
Boiled corn – 1 cup
Chicken stock – ½ cup
Cottage cheese/paneer – ½ cup
Red chilli, pepper powder and salt as per taste
Refined flour – 60 gm
Margarine -2 tbl.sp
Egg – 4
Milk – 2 cup

Method
Melt margarine and mix with flour and then cook on a low flame for two minutes.
Remove from fire and add chicken, chicken stock and milk. Mix it well and then again cook till the chicken has become soft. Keep on stirring in between.
Remove from fire; add salt, pepper powder, red chilli, egg yolks, corn and paneer.
Pour this in a baking tray and bake in an oven at 180 degree for half an hour.

Turkey Chicken

Ingredients
Chicken – 1 kg boiled and pricked with a fork
Chicken stock – 1 cup
Walnuts – 500 gm
Milk – ¾ cup
Olive oil – 6 tbl.sp
Pepper powder – 1 tsp
Mustard – ½ tsp
Bread crumbs – ½ cup
Salt as per taste

Method          
In a bowl of water add bread crumbs, mix well and add this to the chicken stock.
Make a thick paste of walnuts and mix with olive oil and milk, salt,mustard and pepper powder.
Apply this on the whole chicken and leave it to marinate for few hours.
Skew it in a skewer and cook in a tandoor or grill it and serve hot.

Baked Chicken With Cheese

Ingredients
Boneless chicken – ½ kg
Green peas – 150 gm
Hopped mushroom – 100 gms
Chopped beans – 50 gms
Grated carrot – 50 gms
White flour or maida – 100 gms
Tomato puree – 1 cup
Grated Mozzarella cheese – 200 gms
Chopped garlic – 7 to 8
Green chillies – 6
Coriander leaves – ½ cup
Parsley leaves – ½ cup

Method

Wash all the vegetables and chop or grate it. Mix these vegetables with boneless chicken and 1 tsp salt. Then add tomato puree, coriander leaves, parsley leaves and white sauce. Take a baking bowl, grease it with 1 tsp butter. Spread these ingredients and cover it completely with grated cheese. Bake it at 120 centigrade for 20 to 25 minutes. Don’t remove it immediately. After 10 minutes remove from the oven and serve.
