Corn And Mushroom Tart





Ingredients

For making dough

Maida flour/all purpose flour -

Butter - 100 gm



For the stuffing

Garlic - 5 to 6 chopped

Spring onion bulbs-  4 to 5

Spring onion leaves

Corn - 1 cup

Red pepper - 1/2

Yellow pepper - 1/2

Green pepper - 1/2

Mushroom - 1 cup

Cream cheese - 2 to 3 tbl.sp

Eggs - 3

Oregano - 1 tsp

Chilli flakes - 1 tsp

Salt and pepper as per taste



Method

In a bowl take all purpose flour and butter at room temperature and mix it well till it froms like bread crumbs. Then add water and knead it to a dough. Refrigerate it for 10 minutes.



Heat a tbl.sp of olive oil and to it add chopped garlic and cook  for few seconds.

Then add chopped spring onion bulbs and saute till it becomes soft. Add all the vegetables , oregano, chilli flakes, salt and cook till it becomes dry.

In the end add chopped spring onion leaves, mix it and off the flame.



In another bowl beat three eggs and cream cheese, salt and pepper and mix it well.

Take out the dough and  roll it half inch thick. Cut small circle and place it in the tart. First grease the tart with oil.Prick the  tart with a fork so that it does not puff up. Bake it in the oven at 180 degree celcius for 10 minutes. Unmould it and  put the stuffing and pour a tbl.sp of  egg mixture and again bake it at 180 degree celcius till egg is cooked. Serve hot.

Corn Kabab



Ingredients
corn kernels - 4 to 5 tbl.sp
boiled potato - 4 to 5
ginger green chilli paste - 1 tsp
red chilli powder - 1/2 tsp
roasted cumin powder - 1 tsp
garam masala - 1/2 tsp
oats - 1/2 cup
juice of half lemon
chopped coriander and mint leaves
salt as per taste

Method
Boiled coarsely corn kernels and mash or grate boiled potatoes.
Mix all the ingredients given above and make small round flat balls and shallow fry in oil.
Sprinkle chaat masala on top and serve hot.

Corn and Chicken Fritters (chicken pakoda recipe)



Ingredients
boiled chicken - 1 cup
fresh corn kernels - 1 cup
garlic - 3 to 4
ginger - 1 small piece
soya sauce - 1 tsp
green chilli sauce - 1 tsp
red chilli sauce - 1 tsp
salt and pepper as per taste
corn flour - 1 tbl.sp
refined flour - 2 tbl.sp
chicken stock - 1 tbl.sp

Method
In a bowl add all the ingredients given and blend it with a blender. Make small flat balls and shallow fry in oil on both the sides. Serve hot with ketchup.

Baked Corn Cheese Tikki



Ingredients
Paste of corn kernel - 1 cup
garlic - 2 to 3 crushed or powdered garlic - 1/2 tsp
red chilli powder - 1/2 tsp
pepper powder - 1/2 tsp
oregano - 1/4 tsp
pepper and salt as per taste
cheese
cornflour - 1 to 2 tbl.sp
paste of refined flour
bread crumbs
corriander leaves

Method
Add all the ingredients in a bowl and mix well. Make small flat balls. Dip in refined flour paste and coat with bread crumbs. Place in a baking tray. Put little oil and bake in a oven at 180 degree for 15 to 20 minutes. Serve hot with ketchup or chutney.

Corn Salad with Mayonaisse Dressing



Ingredients
corn kernels boiled - 200 gm
tomato - 1
cucumber - 1
onion - 1
mayonaisse - 2 tbl.sp
corriander/parsely leaves
salt and pepper as per taste

Method
Deseed tomatoes and chop finely. Boil corn kernels. Chop onion and tomato and corriander leaves.
Mix all these ingredients and refrigerate for an hour before serving.

Cheesy Spinach Corn Sandwich




Ingredients
few bread slices
few cheese slices
potato - 1 boiled and mashed
corn - 1 cup
7 to 8 blanched spinach leaves
ginger green chilli paste - 1 tsp
roasted cumin powder - 1 tsp
 bread crumbs - 1 cup
salt as per taste

for the spread
mayonnaise - 2 tbl.sp
tomato ketchup - 1 tbl.sp
salt and pepper as per taste


Method
First blend coarsely spinach and corn and then to it add all the ingredients given and make small flat round balls. Shallow fry in oil till golden brown.
Heat bread till crispy.spread mayonaisse mixture on top and place one cheese slice and spinach cutlet. close with other bread and cut into half and serve.

Canapes Stuffed with Paneer and Corn

Ingredients
few canapes
onion - 1
boiled corn kernels - 1 cup
half of tomato
half of capsicum
paneer - 1/2 cup
red chilli sauce - 1 tsp
lemon juice - 1/4 tsp
salt as per taste
1 tbl.sp of cheese

Method
Deep fry canapes in oil and keep aside.
Heat oil in a pan, add onion and fry till soft, then add tomatoes, capsiucm finely chopped,corn, paneer, red chilli sauce, salt, lemon juice and cook for 2 to 3 minutes.
Put one spoon of it in canapes and garnish with cheese. Serve immediately.

Easy and Cheesy Spinach Corn Toast

Ingredients
finely chopped spinach - 1 cup
boiled corn - 1 cup
garlic flakes choppped -3 to 4
green chilli/pepper powder as per taste
salt as per taste
cheese

Method
Heat oil in a pan, add chopped garlic and green chilli and saute for few seconds.  Then add spinach and corn and stir fry till spinach is cooked. Add salt as per taste. Remove and leave it to cool.
Take bread slices, spread one spoon of this mixture on it and garnish with grated cheese. Cover with another bread slice and apply little butter on both the sides. Toast till golden brown in color.
Serve hot.

Corn Salad

Ingredients
Corn kernels – 1 cup
Red pepper chopped – 2 tbl.sp
Yellow pepper chopped – 2 tbl.sp
Spring onion chopped – 3 to 4 tbl.sp
Mayonnaise – 3 tbl. Sp or as per taste
Basil herb – ½ tsp
Black pepper and salt as per taste

Method
Boil corn kernels for 3 to 4 minutes if you are using fresh one. Drain the water and keep aside.

In a bowl, take corn kernels, red pepper, yellow pepper, spring onion. Mix well and add mayonnaise, basil herb or fresh basil, salt and pepper. Mix well and serve.

Cheese Corn Balls

Ingredients
Processed cheese – ½ cup
Grated carrot – ½ cup
Coarsely blended corn – ½ cup
French beans – ¼ cup
Grated Cabbage – ¼ cup
Pepper powder – ½  tsp
Green chilli sauce – 1 tsp
Salt as per taste
Corn flour – ½ cup
Oats – ½ cup

Method
Roast oats for 2 to 3 minutes and then remove it.
In a bowl, combine together corn, cheese, cabbage, carrot, pepper powder, green chilli sauce, corn flour, oats and salt. Without adding water make dough of it. (the vegetable will release its water)
Make small round balls and deep fry in oil till golden brown.

Serve hot with tomato ketchup.

Corn Chaat

Ingredients
Boiled  fresh corns – 1 cup
Boiled green peas – 4 tbl.sp
Grated ginger – ½ tsp
Lemon juice – 1 tsp
Paneer – 7 to 8 cubes
Chaat masala
Pepper powder as per taste
Coriander leaves for garnishing

Method
Roast paneer in a pan for few minutes.
In a bowl, combine together corn, green peas and roasted paneer.
Sprinkle pepper powder and chaat masala as per taste and garnish with coriander leaves and serve.

Corn Paneer Cutlet

Ingredients
Boiled and mashed corn – 1 cup
Paneer – ½ cup
Ginger green chilli paste – 1 tsp
Garam masala – ½ tsp
Red chilli powder – ½ tsp
Cumin powder – ½ tsp
Corrriander leaves – ½ cup
Oats or bread crumbs – ½ cup
Lemon juice – ½ tsp
Salt as per taste

Method
In a bowl, mix all these ingredients given, and make round tikkis and shallow fry in oil and serve hot with chutney or ketchup.

Corn Banana Cutlet

Ingredients
Fresh corn – 1 cup
Raw banana – boiled and mashed – 1 ½ cup
Bread crumbs – 1 cup
Ginger green chilli paste – 1 tsp
Red chilli powder – ½ tsp
Cumin powder – ½ tsp
Chaat masala – ½ tsp
Lemon juice – 1 tsp
Salt as per taste

Method
Boil raw banana and mash it and coarsely blend corn and mix both together.
To this add, all the ingredients given and make small flat round balls like tikki.
Shallow fry in oil and serve hot with chutney or ketchup.

Baked Chicken In Corn

Ingredients
Chicken – ½ kg
Boiled corn – 1 cup
Chicken stock – ½ cup
Cottage cheese/paneer – ½ cup
Red chilli, pepper powder and salt as per taste
Refined flour – 60 gm
Margarine -2 tbl.sp
Egg – 4
Milk – 2 cup

Method
Melt margarine and mix with flour and then cook on a low flame for two minutes.
Remove from fire and add chicken, chicken stock and milk. Mix it well and then again cook till the chicken has become soft. Keep on stirring in between.
Remove from fire; add salt, pepper powder, red chilli, egg yolks, corn and paneer.
Pour this in a baking tray and bake in an oven at 180 degree for half an hour.
