Tomato Chutney



Ingredients
Mustard seed - 1 tsp
Asafoetida - 1/4tsp
Black gram dal/urad dal - 1 tsp
Red chillies - 3
Few curry leaves
Sliced onion - 1
Roasted peanut - 1 tbl.sp
Tomatoes - 5
Sugar and salt as per taste

Method
Heat a tsp of oil in a pan and add mustard seeds and let it splutter, then add asafoetida and black gram dal and cook till dal changes its color. Add red chillies, few curry leave and sliced onions and cover and cook till onions become soft. Add roasted peanuts and tomatoes and cook till tomatoes become soft. Off the fame and let it cool down. Blend it to a fine paste and add sugar and salt as per taste and serve hot with roti, chapati, idli or dosa.

Sweet and Spicy Tomato Chutney



Ingredients
tomato - 300 gm
mustard seed - 1 tsp
fennel seed - 1 tsp
cumin seed - 1 tsp
ginger grated - 2 tsp
whole red chilli - 3
jaggery - 2 tbl.sp
salt - 1/2 tsp
few corriander leaves for garnishing

Method
First make a puree of tomato and keep aside.

Heat oil in a pan add mustard seed, cumin seed, and  fennel seed. When they splutter add ginger and red chilli. Saute for few seconds. Add tomato puree, jaggery and salt. Cook for few seconds and add little water. Slow the flame, mix it all well and let it cook till it becomes thick. Serve hot with rice or roti.

Chilli Garlic Chutney




Ingredients
red chilli - 2
garlic flakes - 8 to 10
coconut - 1/4 cup
onion - 1
few curry leaves
tamarind - 1 small ball
salt as per taste

Method
Sauté red chilli and garlic flakes in oil for few seconds. Then blend all the given ingredients to a fine paste. Serve it  with Idli or Dosa.

Coconut Ginger Chutney ( South Indian Chutney)



Ingredients
coconut - 1/2
green chillies - 2
one small piece of ginger
salt as per taste

for tampering
mustard seed - 1 tsp
few curry leaves
red chilli - 1

Method
Make a paste of coconut, green chillies, ginger and salt and temper it with mustard seed, curry leaves and red chilli. Serve hot with dosa or idli.

Ingredients
Freshly Grated coconut – 1 cup
Onion – 1 small
Turmeric powder – ¼ tsp
Red chilli powder and salt as per taste
Dry shrimps cleaned and roasted – 2 tbl.sp

Tomato Chutney

Tomatoes – ½ kg
Onion – 2
Red chilli – 4 to 5
Garlic flakes – 7 to 8
Few curry leaves
Coriander leaves
Tamarind pulp – 2 tsp
Salt as per taste
Sugar – 1 to 2 tsp

For tampering
Mustard seed – ½ tsp
Black gram dal – ½ tsp
Pinch of asafoetida

Quick Raw Mango Chutney

Ingredients
Grated raw mango – 1 cup
Jaggery as per taste
Red chilli powder – 1 tsp
Turmeric powder – ¼ tsp
Salt as per taste

Method
In a bowl, combine together jaggery, red chilli powder, turmeric powder and salt and mix well by adding little water so that all the ingredients are mixed well.

Then add grated raw mango and again mix it. It is ready to serve.

Corriander Chutney

Ingredients
Chopped coriander leaves – 2 cups
Ginger – 2 inch piece
Tamarind – small ball sized like lemon
Green chillies, jaggery and salt as per taste

Method
Grind all the ingredients given to a smooth paste and serve with kachorie.

Sweet Chutney

Ingredients
Tamarind – lemon sized (Soak in water)
Grated jiggery – 5 tbl.sp
Seedless dates – 5 (cooked in little water)
Salt – 1 tsp
Red chilli powder – ¼ tsp

Method
Make a paste of all these ingredients and serve with kachorie or pani puri and even samosa.

Mint Chutney

Ingredients
Mint leaves – 1 cup
Onion - 1
 Ginger – ½ inch piece
Garlic – 2 flakes
Green chillies – 2
Lime juice – 1 tbl.sp
Salt as required

Method
Grind  everything to smooth paste and use as a sandwich spread or as a chutney for samosa.
