Punjabi Samosa | Crispy and Spicy Aloo Samosa



Ingredients
Potato - boiled and mashed -4
Boiled green peas- 1/2 cup
Cumin seed - 1 tsp
Ginger grated - 1 small piece
Green chilli - 2
Roasted and crushed corriander seed - 1 tbl.sp
Chopped corriander leaves
Turmeric powder- 1/4 tsp
Red chilli powder - 1 tsp
Amchur powder - 1 tsp
Chaat masala - 1 tsp
Salt as per taste

For the samosa patti
All purpose flour/maida  - 1 cup
Caraom seed/ajwain - 1/2 tsp
Ghee or vansapati - 4 tbl.sp
Salt - 1/2 tsp

Method
First make a dough by adding all the ingredients and little water to make a hard dough. Cover and keep aside.

For the stuffing
Boil potatoes and green peas seprately. Mash potatoes.
Heat oil in a pan, add cumin seed and cook till it splutter. Add ginger green and saute for few seconds. Then add boiled and mashed potato, boiled green peas and rest of the ingredients. Cook for few seconds and then off the flame and let it cool down.

Wthe the help of a rolling pin roll small ball of dough into round shape and cut into half. Make a cone shape and fill th stuffing inside it . close it and deep fry in oil till golden brown in color. Serve hot with chutney.

Green Peas Tikki



Ingredients
for the stuffing
Green peas boiled - 150 gm
freshly grated coconut - 2 to 3 tbl.sp
green chilli chopped as per taste
ginger garlic paste - 1 tsp
chaat masala - 1 tsp
chopped corriander leaves
salt as per taste
juice of half lemon

chickpeas flour /besan - 3 tbl.sp
yoghurt - 1 tbl.sp
red chilli powder - 1 tsp
cumin seed - 1 tsp
salt as per taste

Method
Heat oil in a pan and add green chilli and saute for few seconds then add ginger garlic paste and again saute for few seconds.
Add freshly grated coconut, green peas boiled, chaat masala, salt and juice of half lemon. Cook till it becomes dry. Mash green peas while cooking. leave it aside to cool.

In another bowl take besan flour, yoghurt, red chilli powder, cumin seed and salt and make a stiff dough. Keep aside for few minutes.

With the help of rolling pin roll small rotis and put one spoon of the stuffing and cover it and make it flat. Deep fry in hot oil and serve hot with ketchup.

Fried Chicken Leg Pieces




Ingredients
chicken leg pieces - 7
one small piece of ginger
6 flakes of garlic
corriander powder - 1 tbl.sp
roasted cumin powder - 1 tsp
turmeric powder - 1/2 tsp
garam masala - 1/2 tsp
salt and chilli as per taste

Method
Clean and wash the chicken and pat it dry. Make slit in the chicken pieces so that the marinated masala is absorbed by it.

Make a paste of ginger and garlic.

Make a marination from all the given ingredients and marinate the chicken for 1 to 2 hours or overnight.

Deep fry the chicken and serve hot.

You can even coat it with egg batter and bread crumbs.

Jain Banana Vada

ingredients
raw banana boiled and mashed - 3
green chilli - 2 or as per taste
ginger - 1 small piece
mustard seed - 1 tsp
corriander leaves
salt as per taste
Make a batter of chickpeas flour
by adding water and salt. You can add red chilli powder if you need more spicy.

Method
Boil and mash banana and keep aside.
Heat oil in a pan and add mustard seeds, when it splutters add green chilli and ginger, saute for 2 to 3 minutes and then add mashed banana and corriader leaves and salt. Mix well, cook for a minute and off the flame.
Make small balls from it and dip it in the besan batter and deep fry in oil till golden brown in color.

Egg Pakora

Ingredients
Egg – 2
Chickpeas flour/besan flour – 200 gm
Ginger garlic paste – 1 tsp
Red chilli powder – 1 tsp
Roasted cumin powder – 1 tsp
Baking soda – ¼ tsp
Chaat masala – 1 tsp
Green chilli chopped – 1
Few curry leaves
Coriander leaves
Salt as per taste
Oil for frying

Method
Boil egg and cut into small pieces.
In another bowl, mix together all the given ingredients and make a smooth batter. Add these boiled egg pieces and mix it well.

Deep fry this in hot oil and serve hot with tomato ketchup or chutney.

Methi Pakoda (Fenugreek Leaves Recipe)

Ingredients
Besan/gram flour – 1 cup
Methi/fenugreek leaves– 3/4 cup
Yoghurt – 2 tbl.sp
Red chilli – ½ tsp
Cumin powder – ½ tsp
Paste of ginger and green chilli – 1 tsp
Turmeric powder – ¼  tsp
Baking soda – ¼ tsp
Lemon juice – 1 tsp
Salt as per taste
Oil – 1 tsp

Method
Chop fenugreek leaves finely.
In a bowl, add all the ingredients except baking soda and oil, mix it well, add water and make a  thick pouring consistency batter.
Now add baking soda and oil and mix well.
Heat oil in a pan, with the help of a spoon, drop one tsp of this batter in the oil and fry on a medium flame till golden brown in color.

Serve hot with chutney or ketchup.
