Soya Bean and Methi Paratha



Ingredients
Soya beans – 100 gms
Onion – 1 medium
Ginger garlic paste – 1 tsp
Red chilli powder – as per taste
Coriander powder – 1 tsp
Amchur powder – 1 tsp
Roasted cumin powder – 1 tsp
Salt as per taste
Handful of methi leaves/fenugreek leaves chopped
Wheat flour dough


Method
Wash and soak soya beans in water for 4 to 5 hours. Boil it till it becomes soft. With  a blender blend it coarsely. Add all the ingredients given and mix well.
Make a dough from wheat flour and keep aside.
With the help of a rolling pin make a round chapatti and put one spoon of this mixture in the centre and close it from all sides.
With the help of rolling pin, add roll paratha and cook on a hot flat pan by adding little ghee or oil. Serve hot with yogurt or pickle.

Soya Bean Dosa



Ingredients
rice - 2 cups
urad dal/black gram dal - 1 cup
soya bean - 3/4 cup
fenugreek seed - 2 tsp
salt - 1 tsp

Method
Wash and soak rice, urad dal and fenugreek seed together and in another bowl soak soya bean for 4 to 6 hours.
Blend this to a fine paste and leave it to ferment for 8 to 10 hours or overnight.
Heat a pan and with the help of a spoon pour one spoon of  batter into the pan and spread it in a circular way. Put little oil on sides.
Remove when ready and serve hot with chutney.

Tofu Cutlet


Ingredients
Tofu – 1 cup
Potato – 2 shed
Carrot – 1 grated
Onion – 1
Roasted oats – 2 tbl.sp
Chaatmasala – 1 tsp
Cumin seed – ½ tsp
Ajwain – ¼   tsp
Red chilli powder and salt as per taste

Method
Boil and mash potatoes.

In a bowl, combine all the ingredients and make small flat round balls . Shallow fry in oil till golden brown in color and serve hot with ketchup or chutney.

Soya Chana Tikki

Ingredients

Coriander leaves
Red chilli powder and Salt as per taste
Soya flour – 2 tbl.sp Ingredients
Chickpeas boiled – 100 gm
Soya keema – 50 gm
Ginger garlic paste – 1 tsp
Green chilli – 2
Roasted cumin powder – 1 tsp
Garam masala – ¼ tsp
Lemon juice – 1 tsp



Method

Blend chickpeas and soya keema together and then to it add all the other ingredients and make round tikkis.
shallow fry in oil till golden brown in colour and serve hot with chutney or ketchup.

Soya Flour Cake

Soya flour – 1 cup
Refined flour – ¼ cup
Oil/unsalted butter – ½ cup
Baking powder – 1 tsp
Sugar – 1 cup
Vanilla essence – 1 tsp
Egg – 2
Yoghurt – 2 tbl.sp
Milk – ¼ cup
Chopped nuts and raisins

Method
In a bowl, first sieve together soya flour, maida and baking powder and keep aside.
In another bowl, beat butter and sugar and then add eggs, vanilla essence and yoghurt, beat till the mixture becomes soft and fluffy.
Gradually add the soya flour mixture to the egg batter and again beat it for 10 minutes. You can add little milk if it is thick.
Grease baking tray with oil, pour this batter and leave it to bake in a preheated oven at 180 degree for 50-55 minutes.
After you switch off, let it remain in the refrigerator for another half an hour.
Remove , cut into desired pieces and serve.

Soya Bean Cutlet

Ingredients
Soya bean – 1 cup
Potato – 2
Onion – 1
Ginger garlic paste – 2 tsp
Turmeric powder – ¼ tsp
Garam masala – ½ tsp
Lemon juice – 1 tsp
Green chilli and salt as per taste
Coriander leaves – ½ cup
Cornflour – 1 tbl.sp
Oats – 1 cup

Method
Soak soya bean in water overnight and then boil it and mash it well.
Boil potato and mash it.
Chop onion and green chilli.
In a bowl, mix together boiled and mashed soya bean, boiled potato, onion, ginger garlic paste, turmeric powder, garam masala, lemon juice, green chilli, salt and coriander leaves.
Make small flat round balls. Dip in cornflour paste and coat it with oats and shallow fry in oil.

Serve hot with chutney or ketchup.
