Biscuit Cake In Kadai | Kadai Cake | Eggless Cake Without Oven | Biscuit...





Ingredients
Digestive biscuits –
200 gm
Maida/all purpose
flour – 4 tbl.sp
Powdered sugar –
100 gm
Vanilla essence – 1
tsp
Baking powder – 1 tsp
Baking soda – ½ tsp
Milk
Tuti fruitti

Method
Blend biscuit into
a fine powder and to it add all purpose flour, sugar, tuti fruiti, baking
powder, baking soda, vanilla essence and mix well. Add milk and make smooth
batter.
Take a baking pan, grease
it with oil.  Pour the batter and tap it.
 Sprinkle some more tuti fruiti on top.
Heat a pan on a
high flame, place a plate on it. Slow the flame and place this baking pan on
it.  Cover and cook till done.  Prick it with a knife. If it comes clean, it is
 ready. When cool, cut into pieces.

Eggless Strawberry Cake



Ingredients
All purpose flour - 200 gm
Oil/butter - 100 gm
Powdered sugar - 150 gm
Baking powder -1 tsp
Baking soda - 1/2 tsp
Salt - 1/2 tsp
Puree of strawberry - 1/2 cup
Vanilla essence - 1 tsp
Yogurt - 3 tbl.sp to it add little water

For frosting
Cream
Food color
Slices of strawberry

Method
Seive together all purpose flour, baking powder, baking soda, salt and keep aside.
In another bowl beat together oil/butter, sugar, vanilla essence and strawberry pulp and yogurt. Slowly, slowly add add purpose flour mixture and make a smooth batter.

Grease a baking mould and pour this mixture and bake in a preheated oven at 200 degree for 30 to 35 minutes. Let it cool down.
Decorate it with cream and strawberry slices.

Marble Chocolate Cake



Ingredients
All purpose flour – 200 gm
Powdered sugar – 170 gm
Oil – 90 gm
Eggs – 2
Baking powder – 1 tsp
Baking soda – ½ tsp
Salt – ½ tsp
Dark chocolate – 40 gm
Cocoa powder – 1 tbl.sp
Milk – ¼ cup
Vanilla essence – 1 tsp

Method
Take a bowl and add oil and sugar and whisk it till it becomes creamy. Then add egg one by one along with vanilla essence and beat it for a minute with a hand blender.
In another bowl, sieve together flour, baking soda, baking powder and salt.
Then little by little add it to the egg mixture and then with the help of a spatula do cut and fold. If the batter is too thick add little milk.
In another bowl, take dark chocolate, add little water and keep it for boiling till chocolate melts completely.
In another bowl take 2 to 3 tbl.sp of batter and add this melted chocolate and mix well, add cocoa powder too and again mix it well.
Now take a grease baking mould, put little white batter, spread it and then put little chocolate batter, with a fork make design. Again pour white batter and then chocolate batter, design it and then bake it in a preheated oven at 180 degree celcius for 35 to 40 minutes.
When cool demould it.

Eggless Orange Cake



Ingredients
Refined flour – 200 gm
Powdered Sugar – 120 gm
Oil – 70 gm
Yogurt – 50 gm
Pulp of one orange
Baking powder – 1 tsp
Baking soda – ½ tsp
Salt – ½ tsp
Orange food color – ½ tsp

Method
Take a baking mould, grease it with oil or butter and keep aside.
In bowl sieve together flour, salt, baking powder and baking soda and food color.
In another bowl, Take sugar , yogurt, orange pulp and beat until creamy. Then add oil and beat for a minute. Gradually start putting refined flour and whisk it. If the batter is too thick, add little water and again whisk it.
Pour it in the baking moulds and bakes in a preheated oven at 180 degree Celsius for 30 to 40 minutes or until done.
When at room temperature turn upside down and your cake is ready.

For icing
Butter – 100 gm
Icing sugar – 200 gm
Orange juice – 1 to 2 tbl.sp

Banana Upside Down Cake


Ingredients
Refined flour – 200 gm
Castor Sugar – 120 gm
Oil – 70 gm
Eggs – 2
Baking powder – 1 tsp
Baking soda – ½ tsp
Salt – ½ tsp
Vanilla essence – 1 tsp
Bananas – 5
Milk – ¼ cup

Method

Heat sugar in a pan by adding two tsp of water. Keep cooking until it caramelize.
Take a baking mould, grease it with oil or butter and spread 2 bananas that are round sliced. Now pour this caramelize sugar on top of it and keep aside.
In bowl sieve together flour, salt, baking powder and baking soda.
In another bowl, take 3 bananas and prick it with a fork till it becomes mushy. Take sugar and oil and beat until creamy. Then add eggs one at a time and whisk it till creamy and then add vanilla essence.

Gradually start putting refined flour and whisk it. If the batter is too thick, add little milk and again whisk it.
Pour it in the baking mould and bake in a preheated oven at 180 degree Celsius for 30 to 40 minutes or till done.
When at room temperature turn upside down and your cake is ready.

Eggless Lemon Tuti Fruiti Cake


Ingredients
refined flour - 150 gm
powdered sugar - 100 gm
oil/butter - 75 gm
yogurt - 50 gm
baking powder - 1 tsp
baking soda - 1/4 tsp
lemon zest - 1 tsp
lemon juice - 1 tbl.sp
tuti fruiti  - 1/2 cup
hot water - 1/2 cup
vanilla essence - 1 tsp

Method

In a bowl take oil, powdered sugar, yogurt, vanilla essence, lemon zest, lemon juice and whisk it till creamy.
In another bowl, sieve together refined flour, baking soda and baking powder and gradually mix into the batter. You can add little hot water if the batter is too thick. Add tuti fruiti  by first coating it with
one tsp of refined flour so that it does not get settled down.

Take a baking mould and grease it with oil or butter and  then dust it with flour. Pour this batter and
bake in a preheated oven at 180 degree celicus for 30 to 40 minutes.

Remove and frost it with a mixture of icing sugar, lemon and little milk if required and apply all over it. Serve.

Dates and Chocolate Cake

Ingredients
powdered sugar - 150 gm
egg - 2
paste of dates - 1/4 cuip
cocoa powder - 1/4 cup
walnut - 1/4 cup
butter - 80 gm
milk - 1/4 cup
refined flour - 150 gm
baking powder - 1 tsp
baking soda - 1 tsp

Method
Blend together sugar, egg, butter, cocoa powder, walnut, paste of dates and milk. Remove in a bowl. Seive together refined flour, baking soda, baking powder and gently mix with the batter.
Bake in a preheated oven at 200 degree for 35 to 40 minutes. Prick it . If it comes out clean then the cake is ready.

Simple Chocolate Cake




Ingredients
maida/all purpose flour - 125 gm
powdered sugar - 250 gm
oil - 1/2 cup
milk - 1/2 cup
butter milk - 1/2 cup
a pinch of salt
vanilla essence - 1/2 tsp
cocoa powder - 3/4 cup
baking powder - 1 1/2 tsp
baking soda - 1 1/2 tsp
hot boiling water - 1/2 cup
eggs - 2

Method
Sieve together all the dry ingredients and keep aside. In another bowl take eggs, oil, milk, butter milk and whisk it well. Then gradually add dry ingredients to it and repeat till done. In the end add little boiling water and whisk well for a second.
Grease cake pan with butter and dust it with cocoa powder. Pour these mixture on it and bake in a preaheated oven at 180 degree centigrade for 30 to 40 minutes.

Molten Lava Cake



Ingredients
all purpsse flour - 30gm
butter - 100 egg - 1
powdered sugar - 100 gm
cocoa powder - 3 tbl.sp
coffee powder - 1 tsp
chocolate bar - 33 gm
pinch of baking powder
pinch of baking soda

Method
Melt butter and chocolate bar in a double boiler.
Sieve together all purpose flour, cocoa powder, coffee powder, baking powder and baking soda and keep aside.

Add sugar  and eggto the butter and chocolate mixture and whisk till it becomes creamy and fluffy.
Fold powdered ingredients gradually and pour in a baking muffin mould and bake for 10 to 12 minutes.

When it cools down, you will see chocolate lava oozing out from it.

Bread Crumb Cake

Ingredients
Refinded flour – 1 cup
Bread crumbs – 2 cup
Powdered sugar – 1 cup
Milk – ¼ cup
Baking powder – 2 tsp
Baking soda – ¼ tsp
Oil – 6 tbl.sp
Chopped cashewnuts – 1 tbl.sp
Jam

Method
In a bowl, combine together all purpose flour and bread crumbs.
In another bowl. Mix together milk, baking soda, baking powder, sugar and oil and leave it aside for 4 to 5 minutes.
Mix flour and bread crumbs to the milk mixture along with  jam.
Grease a microwave safe bowl. Pout this batter into this bowl and sprinkle chopped cashewnuts.
Bake on micro high for 3 to 4 minutes or more if necessary.
Remove and leave it to cool. Cut into pieces and serve.

Eggless Brownie

Ingredients
Refined flour – 170 gm
Butter – 130 gm
Brown sugar – 1 ¼ cup
Baking powder – 2 tsp
Cocoa powder – 3 tbl.sp
Vanilla essence – 1 tsp
Chopped walnut – ½ cup
Milk – ¼ cup
Oil for greasing

Method
Combine together refined flour, baking powder and cocoa powder in a bowl.
In another bowl, beat together butter, brown sugar, and vanilla essence.
Add the refined flour mixture to the wet mixture and mix well. Add milk if required.
Add chopped walnuts.

Bake in a preheated oven at 200 degree celcuis for 40 minutes.

Chocolate Cake

Ingredients
Refined flour – 250 gm
Unsalted butter – 250 gm
Powdered sugar – 250 gm
Baking powder – 2 tsp
Cocoa powder – 4 tbl.sp
Eggs – 3
Buttermilk –  ¾ cup
Vanilla essence – 1 tsp
Salt – a pinch

Method
Sieve together refined flour, baking powder, salt and cocoa powder and keep aside.
Mix butter and sugar and beat with a electric beater till smooth and fluffy.
Then add one egg at a time and then again whisk it with a blender. Add vanilla essence to it.
Now add little flour mixture and little buttermilk, whisk it with a blender and then again add little more flour mixture and butter milk, repeat this two to three times. Beat it till you get a smooth batter.
Pour this batter in a greased baking dish.
Preheat oven at 180 degree Celsius and bake this for 40 to 45 minutes.




Soya Flour Cake

Soya flour – 1 cup
Refined flour – ¼ cup
Oil/unsalted butter – ½ cup
Baking powder – 1 tsp
Sugar – 1 cup
Vanilla essence – 1 tsp
Egg – 2
Yoghurt – 2 tbl.sp
Milk – ¼ cup
Chopped nuts and raisins

Method
In a bowl, first sieve together soya flour, maida and baking powder and keep aside.
In another bowl, beat butter and sugar and then add eggs, vanilla essence and yoghurt, beat till the mixture becomes soft and fluffy.
Gradually add the soya flour mixture to the egg batter and again beat it for 10 minutes. You can add little milk if it is thick.
Grease baking tray with oil, pour this batter and leave it to bake in a preheated oven at 180 degree for 50-55 minutes.
After you switch off, let it remain in the refrigerator for another half an hour.
Remove , cut into desired pieces and serve.

Apple Cinnamon Upside Down Cake

Ingredients
Refined flour – 1 cup
Sugar – ¾ cup
Apple - 2
Cinnamon powder– 1 tsp
Nutmeg powder – ½ tsp
Baking powder – 1 tsp
Vanilla essence – 1 tsp
Unsalted butter – ¾ cup
Milk – ½ cup
Eggs – 2
Lemon juice – 1 tbl.sp
Honey
Salt – ¼ tsp

Method
Cut apple into thin wedges. Grease baking tray with butter and dust little flour on it.  
Drizzle little honey on the baking tray.
Toss this apple wedges with lemon juice and arrange it in the baking tray.
In a bowl, sieve together flour, cinnamon powder, nutmeg powder, salt and baking powder and keep aside.
In another bowl, first whisk together sugar and butter till light and fluffy and then add eggs and vanilla essence and again whisk it till everything is incorporated well.
Add little flour and milk and again blend it for few seconds, and then again add more flour and milk and repeat this process till all flour and milk is used and the batter is completely ready to be baked.
Pour this batter over the apple wedges and bake in a preheated oven at 170 degree for 50-55 minutes.
When done, switch off the oven and leave it in the oven for another half an hour and then remove and invert it in the tray.

Cut into pieces and serve.

Paneer Cheese Cake (Indian Style)

Ingredients
Biscuit crumbs – 1 cup
Unsalted Butter – 100 gm
Cottage cheese/paneer – 400 gm
Yoghurt – 200 gm
Cream – 100 gm
Sugar as per taste
Vanilla essence – 1 tsp
Lemon juice – of half lemon
Lemon zest – ½ tsp
Gelatin or china grass
Jelly or any topping of your choice

Method
Melt butter and mix biscuit crumbs to it, you can use either marie or digestive biscuit. Take a flat tray, spread this biscuit mixture evenly on it and  press it firmly. Refrigerate it for 10 minutes.
Blend together paneer, cream, yoghurt, sugar, vanilla essence, lemon juice and lemon zest  with the help of a blender.  Add gelatin or china grass to it. Pour this on the tray where you have spread your biscuit mixture and leave this to set in the fridge.
When it is set, remove and decorate it with jelly or any fruit or whipped cream and serve.

How To Make Royal Icing


Ingredients
Icing sugar - 450gm
Egg white of two eggs
Lemon juice – 1 tsp

Method
Whisk egg white and then add gradually add  icing sugar and lemon juice and whisk till it becomes like thick whipped cream. When Royal icing sugar is ready, cover with a wet cloth so that the mixture doesn’t get dry and store it in the fridge. Before you put the knife in icing sugar, first dip the knife in cold water and then use it for spreading on the cake
