Soya Palak Cutlets



Ingredients
Soya chunks – 1 cup/50 gm
Small bunch of spinach leaves
Green chilli – 2
Small piece of ginger
Boiled potatoes – 4
Bread crumbs – 1 cup
Roasted cumin powder – 1 tsp
Red chilli powder – 1 tsp
Chaat masala – 1 tsp

Method
Boil soya chunks in water, squeeze the water and blend it coarsely.
Blanch spinach leaves and make a puree of it by adding green chilli and ginger.
Boil potatoes and remove the skin.
Take slice of two bread and make bread crumb of it.
Take a bowl, add all the ingredients given and make small flat round tikkis.
Shallow fry in oil and serve hot with chutney or ketchup.

Palak Paneer Bhurji (Spinach and Cottage Cheese Recipe)



Ingredients
cumin seed - 1 tsp
onion - 1 medium
tomato - 1 big
ginger garlic paste - 1 tsp
green chilli- as per taste
turmeric powder - 1/4 tsp
roasted cumin powder - 1 tsp
salt as per taste
small bunch of spinach leaves chopped
paneer - 100 gm
juice of half lemon
kasuri methi - 1 tsp

Method
Heat oil in a pan and add cumin seeds. When they splutter add green chilli and then ginger garlic paste and then chopped onion and cook till it becomes translucent.
Add chopped tomato and cook till it is totally mashed. Then add all the powdered masala , chopped spinach leaves, juice of lemon and cook till it is dried and then add paneer/cottage cheese and kasuri methi and mix well and cook for few minutes. Serve hot.

Spinach Curd Curry





Ingredients
Sour curd – 1 cup
Soaked peanuts – a handful of
Spinach leaves blanched – a handful of
A small piece of ginger
Garlic cloves – 3 to 4
Coconut – ¼ cup
Besan/chickpeas flour – 2 tsp
Rice flour – 2 tsp
Sugar – ½ tsp
Cumin seed – 1 tsp
Salt as per taste

For tampering
Mustard seed – 1 tsp
Fenugreek seed – ¼ tsp
Red chilli – 2

Method
Boil soaked peanuts till soft. Then make a paste of all the
ingredients given except curd.
Heat pan and put this blended mixture into it and bring it
to boil.
Lower the flame and put curd into it and immediately stir it
and let it simmer for few minutes.
Off the flame and temper it with mustard seeds, fenugreek
seeds and red chilli.
Serve hot with rice or roti.

Palak Methi Vadi (Spinach and Fenugreek Leaves Recipe)

Ingredients
Spinach leaves – 4 to 5 finely chopped
Fenugreek leaves – ½ cup finely chopped
Chickpeas flour – 2 cup
Semolina – 2 tbl.sp
Ginger garlic paste – 1 tsp
Red chilli powder – 1 ½ tsp
Turmeric powder – ½ tsp
Roasted cumin powder – 1 tsp
Salt as per taste
Baking soda – ¼ tsp
Lemon juice – 1 tsp
Oil – 1 tsp
Method
Mix all the ingredients, adding little water. Make a thick dosa like batter. Grease one flat tray and pour this batter and steam this for 10 to 15 minutes  When you prick it with a knife, it should come out clean, then it is cooked.
When done, remove and leave it to cool.
Cut into square pieces and shallow fry in oil.

Serve hot with tomato ketchup.

Palak Paneer

Ingredients
Spinach – 2 bunch
Paneer – 250 gm
Green chillies – 2
Garlic flakes – 7 to 8
Cumin seed – ½ tsp
Salt as per taste
Lemon juice – 2 tsp
Fresh cream – ¼ cup

Method
Chop garlic
Cut cottage cheese/paneer into small cubes.
Remove stem and Wash spinach leaves, blanch it in hot boiling water for 2 minutes and then immediately put in chilled water. Remove and squeeze out the excess water.
Grind spinach to a fine paste along with green chilies.
Heat oil in a pan, add cumin seeds. When they splutter add chop garlic flakes and sauté for a minute. Then add spinach puree and stir. Add water if required. When the gravy starts boiling, add paneer cubes and mix well.
Remove from fire, add lemon juice and fresh cream and serve hot.

Quick Spinach Recipe

Ingredients
Spinach – 1 bunch
Onion – 1 small
Green chilli – 1 or 2
Garlic – 3 cloves
Salt as per taste
Oil

Method
Clean and wash spinach till all the dirt is removed. Chop into small pieces. In a pan, heat oil, and saute onions, green chillies and garlic. Cook till onions are soft, then add chopped spinach, salt and mix well. Cook for only five minutes and remove from fire. Serve with chapati.

Palak Paneer (Spinach Cheese Curry)

Palak Paneer is a very tasty North Indian dish, prepared with spinach and cottage cheese. It is very rich, smooth creamy curry recipe, that is sure to keep you satisfied. This curry goes well with Roti, Naan or hot steamed Rice.
Ingredients.
Paneer or cottage cheese – 250 gm
Spinach – 3 bunches
Ghee or butter = 2 tbl.sp
Chopped Onions – 2
Cumin seeds – 1 tsp
Green chillies – 2
Ginger garlic paste – 2 tsp
Red chilli powder – 1 tsp
Coriander powder – 2 tbl.sp
Tomato puree – 2 tbl.sp or 2 big big tomatoes
Water – 1 cup
Garam masala – ½ tsp
Salt as per taste
Cream – 1 tbl.sp
Kasuri methi (optional)- ¼ tsp

Method
Chop onions finely. Blanch spinach in hot water for 2 minutes and then make a paste of it. Use this hot water for gravy. Light fry paneer in oil till golden brown. You can make tomato puree by blanching in hot water, peel the skin and make a paste of it.
Add ghee or oil  in a deep frying pan and add cumin seeds and let them splutter. Add onions and green chillies and fry till light brown. Add ginger garlic paste and fry for 2 to 3 mintues. Then add red chili powder and coriander powder and mix well. Add tomato paste and cook for 5 minutes on medium heat. Add spinach paste and cook for more 5 minutes. Add fried cubes and mix lightly. Cover and cook for few minutes. Then add spinach water, salt, garam masala, cream and kasuri methi and mix well. Cook on a low flame for 2 to 3 minutes. Serve hot
