How to make Paneer at home

Milk – 1 liter
Fresh curd – 1 cup or 2 lemon

Method
Heat milk in a vessel, when it starts boiling, add curd or lemon juice to it. Reduce flame and gently stir the milk until it curdles completely and clear water is separated. Remove from heat. Let it cool for a while. Then strain through muslin cloth or  pour over a flat fine sieve. Hang the muslin cloth till the water is completely drained out. Do not squeeze. Now put this on a flat plate with the cloth, press on top with another plate and Keep some heavy weight on it. After half an hour, remove the weight, open the cloth and cut into desired shape.
The water which is drained from milk is called whey, which is highly nutritious. You can use it in gravies, while making chapatti dough use this water, to make soft and tasty chapattis.
