Potato Cutlet

Ingredients
Potatoes – ½ kg
Mix vegetable – 250 gm
(Chopped carrot, French beans, Pea, Capsicum)
Bread crumbs – ½ cup
Corn flour powder – ¼ cup
Ginger-green chilly paste – 2 tsp
Chat masala – 2 tsp
Lemon juice – 1
Chopped coriander leaves – ½ cup
Salt as per taste
Oil for shallow fry

Method
Boil and mash potatoes and keep aside.  Boil mix vegetables, drain excess water. You can use this excess water for making nutritious chapatti. Spread this vegetable on a tissue paper to dry. Mix this vegetable with mashed potatoes along with salt, ginger-green chillily paste, corn flour powder, coriander, lemon juice and chat masala. Mix it well, make small flat balls and roll on bread crumbs. Shallow fry it on a medium flame on both the sides. Serve with mint chutney and tomato ketchup.
