Corn Pakoda


Coconut Cream Cake


Ingredients
Refined flour – 150 gm
Butter – 110 gm
Egg - 2
Icing sugar – 90 gm
Milk – 1 tbl.sp
Desiccated coconut powder – 50 gm

To make icing -  
Desiccated coconut – 60 gm
Egg white – 1
Cream – 1 tbl.sp
Icing sugar – 220 gm

Method
Beat butter till soft and fluffy and then slowly add to it sugar and whip it again. Then add egg to it and beat it again till stiff. In another bowl combine refined flour, desiccated coconut and milk and fold in egg white. Grease small cupcakes with butter and pour this mixture into it and bake it for 20 to 25 minutes. When cool, decorate it with coconut icing.
Coconut cream – To make coconut cream, first sieve icing sugar, and then add cream, desiccated coconut and egg white and beat it till it becomes soft and creamy. Decorate cup cakes with this icing and top it with cherries.

Glazed Icing


Ingredients
Icing sugar – 225 gm
Water – 2 tbl.sp
Any edible food color and essence of your choice

Method
Combine sugar and water and heat it till it is warm stirring continuously. Then add food color and essence and glazed icing is ready.
Do not boil it, cook till it becomes warm.

Chocolate Icing


Ingredients
Icing sugar – 1 cup
Water – ¼ cup
Cocoa powder – 2 tbl.sp
Butter – ½ tsp

Method
Combine sugar and water and boil it to make syrup and then add cocoa powder to it. Stir it till it becomes thick. Then stir in half teaspoon of butter for rich creamy choclatee smoothness.

Corn Soup


Besan Bhaath


 Ingredients
Rice – 1 cup
Besan (Chickpeas flour)– 1 cup
Green chilli – 1 chopped or as per taste
 Red chilli powder and salt as per taste
Sugar – 1 tsp
Turmeric powder – 1 tsp
Mustard seed -1 tsp
Oil for cooking
Water – 1 ½ cup
Coriander leaves for garnishing

Method
Wash rice and cook in one and half cup of water. When cooked drain out the water and keep aside.
 In another pan, heat oil, add mustards seeds and fry till it splutters. Then add green chilies, turmeric and besan. Fry these ingredients till besan leaves a nice aroma. Then add red chillies, turmeric powder and sprinkle little water. Cover and cook for a minute. Then add cooked rice, salt and coriander leaves, mix all these ingredients together and cover and cook for a minute. Serve hot.
